Take a second to check out my favorite crockpot recipe! Cheap, easy, delicious, and not a lot of calories depending on your serving size!
With the cold, damp weather we’ve been having lately, chili is always my favorite go-to dish. It's super easy to make and only 1,063 calories in the entire batch! This is just my general recipe, and it always turns out delicious! Feel free to change the recipe around and add some of your favorites. Try to keep it vegan, though! See if your friends and family can even tell a difference. I’ve made it about eight times for new group of people each time, and no one knew it was vegan until after I told them. Super fun to try and, again, SO easy. Hope you enjoy!
Vegan Chili
Ingredients:
Kidney beans, 2 cans
Diced tomatoes, 3 cans
White onion, 1 cup
Daiya dairy free cheddar style shreds, ¼ cup
Veggie ground beef crumbs (I use Boca), 2 cups
Garlic powder, 1 tbsp
Chili powder, 2 tbsp
Corn, 1 can
1 red hot chili pepper
Directions:
1. Prepare onions and peppers first, chop them into pieces. Size carries by preference.
2. Sauté ground beef crumbs in large skillet, add in onions and peppers.
3. Transfer from skillet to crockpot. Crockpot on medium heat.
4. Add all remaining ingredients and stir once every hour. You can stir more or less frequently depending on preference.
5. Top with cheese.
6. Add any other spices you want, Salt and pepper to taste.
7. Best thing about a crockpot is, you can leave it on for as long as you need to. I recommend 2 hours minimum, 10 hours maximum.

Another crockpot recipe I made recently was a vegan potato soup. If you’re feeling up for it, throw some potatoes, corn, onion, vegetable broth, milk, flour, pepper, cumin, and garlic in the crockpot and experiment. I had no recipes beforehand and just kind of experimented until it tasted amazing! One thing I love about crockpots are that you can continuously add to them throughout the process and taste test the whole time!
