Moving out of my sorority house and into an apartment this year was really exciting, but I was pretty much convinced that I was going to starve. I don't know how to cook! But, amazingly enough, I've managed to learn how to make a few things that have kept me going, and haven't made me head straight for the box of Easy Mac. Here are my go-tos:
1. Stir-fry
2. Eggs
Eggs are super easy, super cheap, and can be made in a million ways. I usually do either scrambled (with about a pound of cheese) or sunny side up, depending on my mood. They can be added to so many things! I've put them in stir-fry, on toast with avocado, or just eat them plain.
3. Chicken and Salad
Salad is super easy to make (just lettuce and your favorite veggies!) and adding chicken on top is a no-brainer when you get it pre-cooked and frozen! Just defrost and throw on top!
4. Pasta
Pasta is a go-to for nearly any college student. It's cheap, it's easy, and there are many things that can be put on top. I'm a huge fan of spaghetti, but I've also made it with spinach, mushrooms, parmesan and olive oil (so yummy!).
5. Homemade Chicken Noodle Soup
This sounds scary, but it's really not. All you need are some noodles, some chicken (see the pre-cooked note above), and some chicken or vegetable broth. I also sometimes include corn or hard boiled eggs, depending on how I'm feeling. Then you just throw it all in a pot and let it simmer until the noodles are cooked! This is a great option because you can make it over the weekend and eat it all week. I think I've made it three times in the past month.
6. Tacos
This is another thing that seems way more impressive than it actually is. Just cook some ground beef or chicken and throw it in a taco shell with cheese, lettuce, and tomato. Ta-da!
7. Grilled PB & J
Everybody knows how to make a pb & j, and everybody knows how to make grilled cheese. But have you ever made grilled pb & j? Go do it. It's a god send. (Or, if you're a fancy cheese person, try a grilled brie and jelly. Heaven on earth.)
8. Chili
Chili is another thing you can make over the weekend and eat all week. Plus, it can be super simple. Here is a crazy-easy recipe I found.
