5 Insanely Delicious Dishes For The Cheese Lover

Five recipes that are guaranteed to get your mouth watering! These are great if you are an obsessive cheese lover like myself. A few classics along with healthy recipes just in time for Homecoming events/tailgates this weekend! Easy to make, easy to find ingredients, and easy to transport for any gathering! Definitely going to try all of these delicious dishes to warm up with this fall.

1. Broccoli Cheese Soup

Ingredients

  • 4 large tomatoes (1 1/2 lbs), sliced into halves
  • 1 Tbsp olive oil
  • 1 clove garlic, finely minced
  • Salt and freshly ground black pepper
  • 1 oz asiago cheese, finely shredded (1/3 cup)
  • 1 oz parmesan cheese, finely shredded
  • 1 1/2 tsp Italian seasoning (Optional for top to serve with)

Directions

  • Preheat oven to 425 degrees. Place tomatoes on a baking sheet. In a small bowl, stir together olive oil with garlic. Brush mixture over tomatoes (working to somewhat evenly distribute garlic), then season with salt and pepper to taste. Toss asiago and parmesan together then sprinkle cheeses evenly over tomatoes (about 1 Tbsp over each), then sprinkle evenly with Italian seasoning. Bake in preheated oven about 15 - 18 minutes until cheeses are golden and tomatoes are tender.
  • Great warm for dinner with your roommates or even chilled for quick lunch snack!

4. Spinach and Cheese Egg Muffins

Instructions to make these delicious little breakfast cups:

  1. Preheat your oven to 350°F and spray cooking butter spray in a muffin pan - any size.
  2. Beat together eggs smoothly and evenly. Add in the shredded cheddar or colby jack cheese and stir to combine both ingredients.
  3. In a medium sized frying pan on the stove, cook your diced bacon and onion over medium temp heat for about 8 minutes. Add in fresh spinach and stir to combine. Cook for about 2-3 mins or until spinach is wilted. Remove from heat and let cool off of burner for 3 minutes.
  4. Add spinach, diced bacon, and onion mix to the egg mixture you created earlier and stir to combine everything. Ladle the egg mixture into the muffin pan evenly. Cook for 15 minutes, or until light golden brown.
  5. Remove from oven and let cool for 5-7 minutes before removing from the muffin pan.
  6. Serve with breakfast foods or a nice brunch! Enjoy! :) Healthy too!

5. Healthy Queso Cheese Dip

Ingredients for Healthy Queso Dip:

  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 Roma tomato, diced, plus more for garnish
  • 2 tablespoons all-purpose flour
  • 2 cups unsweetened coconut milk
  • 3 cups shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Kosher salt and freshly ground black pepper, to taste
  • 1/4 cup plain Greek yogurt
  • 1 avocado, halved, seeded, peeled and diced
  • 2 tablespoons chopped fresh cilantro leaves

Cooking Instructions:

  • Melt butter in a medium saucepan over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute. Stir in tomato until softened, about 1-2 minutes.
  • Whisk in flour until lightly browned, about 1 minute. Gradually whisk in coconut milk, and cook, whisking constantly, until slightly thickened, about 4-5 minutes.
  • Stir in cheeses, a handful at a time, until smooth, about 1-2 minutes. Stir in chili powder and cumin; season with salt and pepper, to taste. Stir in Greek yogurt until well combined, about 1 minute.
  • Serve with warm corn tortilla chips at any event or even make for this weekend's Homecoming game party! GO ILLINI!
