11 Pie Recipes For The Soul

According to department stores, it's Christmas time, but let's not rush through November or skip over Thanksgiving. Although the holiday was formed to honor the harvest on stolen land, celebrations today mostly surround gathering around a feast.

Instead of remembering the pilgrims, let's make memories of pie! Here are 11 pie recipes that will warm you up, if the temperature this November finally drops.

1. Apple Hand Pies ( AKA Apple Turnovers)

Who wouldn't love hand-held pies?

2. Pecan Pie

This chef is known for his handy one-pot style; if you follow his directions, it'll be the easiest cleanup a pie has ever seen.

3. Banana Cream Pie Cheesecake

This recipe might count more as a cheesecake than a pie, but it's technically both! It comes to us from the same chef as the video above. Their YouTube channel consists of glorious recipes--pie, especially--but there are other gems you should check out as well!

4. Lemon Meringue Pie

This pie looks light and fluffy, and perhaps not a usual go-to for Thanksgiving. It might seem more of a summer pie than fall, but this tangy dessert has the balance you need between sweet and refreshing after a huge meal.

5. Easiest Pumpkin Pie Ever

According to the video, 100 or so recipes were tried before finding this one--the easiest of them all, apparently.

6. Mini Pumpkin Pie Bites

Because personal pie bites are not the same as having a slice of pie. As mentioned in the video, this crust tastes more like a biscuit.

7. Crustless Cranberry Pie

This one might be a pie cheat -- it doesn't go in the oven! Watch for the easy skillet-style pie recipe. I bet you could trade the cranberries for almost any fruit and it would be delicious!

8. Strawberry Rhubarb Pie

This is one of the only pie on the list--besides the apple turnover pies in number one--that has a crust on top. Lattice crusts are the staple of pies; in cartoons, it's the type most drawn.

9. Peanut Butter Pie

Here is another Chef repeat on the list. It was by far the most attractive peanut butter pie--hands down.

10. Easy Sweet Potato Pie

It looks just like pumpkin, but it's a very different taste! The consistency is similar, however.

11. Chocolate Caramel French Silk Pie

How often do you see a chocolate pie? How about on Thanksgiving? The two should always go hand-in-hand.

Will any of the pies listed above make it on your Thanksgiving menu this year? If you don't get to as many as you want, don't worry: you can celebrate pies on national Pi Day, March 14. Any day is a day to celebrate pies.

Today I started my third week of college at Minnesota State Moorhead. I have survived welcome week, finding my classes on the first day, and being an awkward loner in the dining hall. Even though I have yet to be here for a month, I have already experienced many thoughts and problems that only a new college student can relate to.

"Make sure to get involved when you're in college!"

We've all heard some variation of this phrase, whether it came from parents, other family members, friends, RAs, or college-related articles. And, like many clichés, it's true for the most part. Getting involved during your college years can help you make friends, build your resume, and feel connected to your campus. However, these commitments can get stressful if you're dealing with personal issues, need to work, or aren't sure how to balance classes and everything else going on during the semester.

In college, one of the essential things to have is friends. Yes, textbooks, a laptop, and other school supplies are important but friends are essential. Friends are that support system everybody needs. The more friends you have the better the support system you have. But you also have someone to share experiences with. And don’t settle for just one or two friends because 8 out of 10 times they are busy and you are studying all alone. Or they have other friend groups that do not include you. Don’t settle for just one or two friends; make as many friends as you can. After the first couple of weeks of college, most friend groups are set and you may be without friends.

Finals week is upon us. It is a magical time of year during which college students everywhere flock to the library in attempt to learn a semester's worth of knowledge in only a week. For some students, it's their first time in the library all semester, maybe ever. Others have slaved away many nights under the fluorescent lights, and are slightly annoyed to find their study space being invaded by amateurs.
