Most people think that a vegetarian or vegan’s diet consists of salad and air. There are so many options for the conscious eater, and now even restaurants everywhere are offering more options. Give vegetarianism or veganism a try! It’s a healthier, kinder and more environmentally-friendly diet that’s so delicious and way easier to achieve than you think!

Here is a short list of some of my favorite recipes to get you started.

1. French Toast

Everyone loves French toast, and you're probably wondering how you could even begin to make the dish vegan. Easy, use pureed bananas. They give the batter the exact consistency and taste (surprisingly, I know) as if you were using eggs! This recipe is easy enough for those lazy Sunday mornings, and it's so yummy that you'll want to make it every day. Get the recipe here!

2. Pea Pesto Pasta

Switching gears a bit, this pasta dish is one of my favorites. The pea pesto is so easy to make in a food processor, and it is actually a bit spicy. Fun fact: peas are actually packed full of protein at eight grams per cup! This recipe is sure to please any meat-eater with its bright color and robust flavor. Take a glance at the recipe here.

3. Veggie Tacos

While meat is probably the first taco filling that comes to mind, the veggie options are endless. Tofu, sweet potatoes, grilled portobellos, veggies, avocado...you pick. My personal favorite is blackened tofu with avocado and mango salsa. Check out this great recipe for spiced sweet potato and grilled portobello mushroom tacos!

4. Swedish Apple Pie

This pie is totally gluten-free and vegan, which by default means it’s healthier than traditional apple pie. The pie itself is super simple and quick to make, but the cashew cream sauce requires a little prep (but is still super easy and so worth it)! 5. Spaghetti Squash And Quinoa Fritters

Spaghetti squash is amazing, and when you turn them into fritters, they're even more amazing. These bad boys make a perfect snack or meal. Need I say more? Here's the recipe.

6. Lemon Bars With Shortbread Crust

Lemon bars are my favorite. I love citrus-y things, and these little sweets are perfection. They are ridiculously easy to make and also ridiculously easy to binge eat straight out of the pan in one sitting. I brought these to a party once, and nobody believed that they were vegan! Enough talking. Make these now.
