If you are a vegetarian like me, you may easily get bored of eating all those frozen, pre-made veggie burgers at every barbecue you go to. Do not let the typical summer burger and hot dogs for every meal stifle your taste buds. Get creative! (Chances are, if you eat meat you'll probably put down that over-done burger for one of these great grillers instead.)
Grilled Zucchini Nachos
This is a great substitute for those chips that can be loaded with sodium. Depending on the amount of people you want to share (or not share) your nachos with, grab a few zucchinis and get grilling.Ingredients:-Zucchini
-Cheddar Cheese
-Black beans
-Tomatoes
-Avacado
-Cilantro
-Green Onion
-A little bit of lime juice for extra taste
How do I cook it?
This part is easy. Simply wash, cut and grill the zuchhini for a few minutes on the grill. Add some cheese so it gets nice and melted. (Make sure you place some tin foil under it). Then simply add all of the toppings of your choice!
Grilled Stuffed Peppers
Ingredients-
-Bell Peppers (color of choice)
-Garlic
-Onion
-Brown Rice-Grape Tomatoes
-Parmesan Cheese
-Fresh Basil
-Fresh Mozzerella
How do I cook it?
-Turn on grill, and preheat large pan
-Saute garlic and onions until they are translucent.
-Add in rice, tomato, cheese and basil
-Once all of it is heated, place it all into peppers (washed and cut into halves)
-Place fresh mozzarella on top of pepper
-Grill for about 5 minutes
Grilled Veggie Taco's Gyro
Ingredients:-Soft Taco shell or Pocketless Pita
-Mushrooms
-Peppers (any color)
-Tomatoes
-Red Onions
-Lettuce
-Creamy cucumber dill sauce
How do I cook it?
-Simply start by grilling mushrooms, peppers and tomatoes
-Once cooked, warm pita for a few seconds on grill
-Either fold, or cut open pita and stuff it with vegetables
-Top with shredded lettuce, red onions and cucumber dill sauce
Avocado Corn Salad
Not all grilled meals have to be hot! This salad is great to fill you up and cool you off on those scorching hot days.Ingredients:
-Corn on the cob (Jersey corn if you are lucky!)
-Tomatoes
-Red Onions
-Ripe Avocado
-Lime (for zest and juice)
-Black Beans
-Fresh Cilantro
How do I cook it?
-After peeling and cleaning the corn, use olive oil or butter and cover it in one of the two
-Wrap the corn in tin foil and place it on the grill until cooked, slightly charred
- Once corn is cooked, cut the corn off of the cob
-Chop up tomatoes, onions, avocado, cilantro & beans
-Mix it all together
- Cut lime in half, squeeze juice and zest if needed
-Add salt and pepper to your desired taste
-Stick it in the fridge and eat whenever!
Roasted Beet Salad
Ingredients:
-Various colored beets
-Olive oil
-salt-garlic
-pepper
-feta cheese
-toasted walnuts
-kale
-vinaigrette dressing
How do I cook it?
-Wash the beets and drizzle olive oil all over them
-Add a pinch of salt and pepper
-Wrap in tin foil and grill until soft and tender
-Cut up garlic and beets
-Mix in with kale, feta cheese and walnuts
-Add vinaigrette dressing of your choice
