I don't own a knife block. They are crazy expensive. You can get 3-5 piece knife set at places like TJMaxx or Marshalls They come with covers so you can put them in your drawer without being worried about cutting yourself when you pick them up.
Pie Pan
Can't go wrong with pie.
Quality cookie sheet
Never buy them from the Dollar Store. A strong, industrial style cookie sheet is worth the few extra dollars. They rarely need replacing.
Oven Mitts
Don't burn yourself. *Ouch*

Basically any appliance you have is worth it. The hand mixer, blender, and crock-pot are going to save you time. They are things you can live without, but if you live on a college budget or have a tiny kitchen they will be worth the price.
