Three 20-Minute Recipes For The Time-Strapped College Student

Hungry, but strapped for time? Here are 3 quick recipes!

I. LEMON CHICKEN

INGREDIENTS

  • 1 lb. boneless skinless chicken breasts
  • ¼ cup flour
  • ½ teaspoon salt, pepper to taste
  • 2 tbsp butter
  • 1 ts lemon pepper seasoning
  • 2 lemons, sliced
  • 2 tbsp honey + 2 tablespoons butter (optional)

INSTRUCTIONS

  1. Cover the chicken breasts with plastic wrap and pound until each pieces is about a ¾ of an inch thick. Place the flour and salt and pepper in a shallow dish and gently toss each chicken breast in the dish to coat. Melt the butter in a large skillet on medium high heat; add the chicken and sautée for 3-5 minutes on each side, until golden brown.
  2. Sprinkle each side with the lemon pepper. When the chicken is golden brown and cooked through, transfer to a plate.
  3. Lay the lemon slices flat on the bottom of the pan and cook for a few minutes on each side without stirring so that they caramelize and pick up the browned bits left in the pan from the chicken and butter. Remove and set aside. Serve chicken; top with lemon.

II. RICELESS FRIED RICE

INGREDIENTS

SAUCE:

  • 2 Tbsp. low sodium soy sauce
  • 1 Tbsp. honey/maple syrup
  • â…› tsp. dried ginger

"RICE"

  • 1 15-oz. can drained chickpeas
  • 2 tbsp olive oil
  • 1 large clove minced garlic
  • 2 diced medium carrots
  • 1 diced bell pepper

INSTRUCTIONS

  1. Mix soy sauce, honey/maple syrup, and ginger in a bowl. Set aside.
  2. Pulse chickpeas in food processor until they look similar to rice. Set aside.
  3. Add olive oil to a large pan; heat over medium. Sautée garlic until brown; add riced chickpeas and sautée.
  4. Add sauce; mix to coat completely. Allow to fry and caramelize for up to a minute; remove from heat and serve.

III. DECONSTRUCTED APPLE PIE

INGREDIENTS

  • 1 green apple, cut into 1/2 inch cubes
  • 1 tbsp ground cinnamon
  • 1/4 cup maple syrup

INSTRUCTIONS

1. Place apple pieces into microwave-safe bowl; microwave for 2 minutes. Remove and stir.

2. Add cinnamon; microwave for another minute.

3. Add syrup, microwave for another minute or until apples are golden. Serve.

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
