Going camping? Need some dinner ideas? If you aren’t good at cooking, don’t fret. These recipes are simple and straightforward. If you don’t like using measuring cups in the backcountry, these are the recipes for you. No one wants to eat dried fruit and oatmeal the whole time they are out doing adventurous things. It’s time to step up your game and make some tasty meals that will fill you up and diminish your hangry (hungry+angry) state.

1. Chili-Mac: Great for when you can’t decide if you want chili or mac 'n' cheese. Why not have both?

Ingredients:

-- Pasta

-- Kidney beans, black beans, corn

-- Cheese (If it's for a large group of people, I’d throw at least half a block in there. The more cheese the better.)

-- Tomato sauce (optional)

2. Pizza quesadillas: Get as creative as you want. Put anything in a tortilla, and it will probably be tasty.

-- Tortillas

-- Cheese

-- Pepperoni

Optional:

-- Pizza sauce

-- Mozzarella cheese

Vegetarian:

-- Beans, corn, hummus, veggies

OR EVEN

-- Peanut butter, bananas and/or thin apple slices, honey, Nutella

3. Gato gato: For all my peanut butter lovers out there! This might sound like it would be gross, but trust me, it's good.

-- Pasta

-- Peanut butter

-- Soy sauce

Bam, that’s it. It is that easy, and it tastes heavenly.

4. Sweet potatoes and couscous:

-- Sweet potatoes (add brown sugar)

-- Couscous

A sweet and simple meal that will warm you up.

5. Asparagus and mashed potatoes:


-- Asparagus

-- Butter… and lots of it

-- Instant mashed potatoes

-- Salt and pepper

Are you at home or in the backcountry? It will be hard to tell.

6. Cinnamon Rolls:


These are a bit more complicated, but worth the time.

At home:

1. Pack one packet or three cups of baking mix (such as Bisquick)

2. Combine ¾ tablespoons cinnamon and ½ cup of brown sugar into a zip-top bag

3. Pack extra flour for rolling out dough

4. Pack 3 tablespoons of margarine or butter into a hard top container

In Camp:

  1. Combine baking mix and 1.5 cups of water
  2. Using your water bottle, roll dough into a large rectangle. Sprinkle more flour dough if it gets sticky.
  3. In separate bowl, mix butter and sugar mix until creamy.
  4. Roll up the dough jelly-roll style (pinch closed as you go so the sugar mixture doesn’t fall out).
  5. Use a knife to cut the roll into one-inch slices
  6. Place rolls in a greased pan. Cook on low heat for 25-35 min until the rolls are brown on top and a fork stuck in the dough comes out clean.

Tah dah! Enjoy your tasty cinnamon rolls on a morning where you have some extra time to hang around camp.

Now get out there, go adventure, and make yourself a fabulous meal!

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
