Sweet Treats For Summer

Curb your sweet tooth for the rest of the summer months!

Surviving the summer heat isn't so bad when you have some tasty sweets to snack on. Here are a few recipes to help curb your sweet tooth for the rest of the hot summer months.

Peanut Butter Balls


You'll need:

  • 3 cups Rice Krispies cereal
  • 2 cups smooth peanut butter
  • 3/4 cup butter, softened
  • 3 and 3/4 cups powdered sugar
  • 1 pound melting chocolate (or almond bark)

Instructions:

  1. Combine the peanut butter and the softened butter together in a large mixing bowl.
  2. In a plastic bag, crush the Rice Krispies cereal.
  3. Slowly add the powdered sugar and the crushed Rice Krispies cereal into the large mixing bowl.
  4. Refrigerate the peanut butter mixture for 1-2 hours.
  5. Roll the mixture into balls. If the mixture is too sticky, add a little powdered sugar and crushed cereal as needed.
  6. Melt the chocolate or almond bark and dip the balls into the melted chocolate.
  7. Cool the peanut butter balls on foil or wax paper until the chocolate is set.

Guilt-Free Banana "Ice Cream"

You'll need:

  • 3-4 sliced bananas, frozen
  • 1 spoonful of peanut butter
  • 2-3 teaspoons cocoa powder

Instructions:

  1. Blend frozen banana slices in a food processor. Scrape down the sides of the food processor with a rubber spatula as needed.
  2. It'll take a few minutes, but keep blending the bananas in the food processor until they are smooth and creamy.
  3. Add the peanut butter and cocoa powder to the food processor. Feel free to add whatever flavoring you'd like, such as fresh fruit or flavored syrups.
  4. Place mixture in the freezer until desired consistency.

Cool & Creamy Oreo Parfaits

You'll need:
  • 1 package of Oreos, crushed
  • 3 cups whole milk
  • 2 boxes of instant vanilla pudding
  • 12 ounces of Cool Whip
  • 1/2 stick salted butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar

Instructions:

  1. Whisk the milk and instant pudding in a large mixing bowl until thick and creamy. Place in the refrigerator for 30 minutes.
  2. Fold in the Cool Whip and place back in the fridge.
  3. Using an electric mixer, combine the butter, cream cheese, and vanilla until smooth.
  4. Carefully add the powdered sugar.
  5. Using a rubber spatula, fold the cream cheese mixture into the pudding mixture.
  6. In small mason jars, alternate layers of the cookie crumbs and the pudding mix until they are full.

Skinny Mocha Frappe


You'll need:

  • 2 tablespoons cocoa powder
  • 2 teaspoons coffee powder
  • 1/4 cup boiling water
  • 1/4 cup sugar (or 6 Splenda packets)
  • 1 and 1/2 cups ice cubes
  • 1/2 cup skim or soy milk

Instructions:

  1. Mix together the cocoa, coffee powder, water, and sugar (or sweetener) in a small bowl.
  2. In a blender, combine the ice cubes, coffee mixture, and milk until fully blended.
  3. Serve immediately.

S'mores Dip

You'll need:
  • 1 package semi-sweet chocolate chips
  • 1 bag of big marshmallows
  • Graham crackers for serving

Instructions:

  1. Preheat the oven to 450 degrees.
  2. Pour the chocolate chips into a skillet or oven-safe pan.
  3. Cover the chocolate chips with a layer of marshmallows.
  4. Place in the oven and bake for 8-10 minutes, or until the marshmallows or golden brown.
  5. Let the dip cool for a few minutes, and serve with graham crackers.
