Hey guys! This article is for anyone who wants to cook a great dinner for two, whether it be for you and bae, you and bestie or whatever. The menu is very simple but still super classy, yummy and most importantly, easy to execute. Food is a huge part of my culture and I always equate food with happiness and good times because it's a great way to bring people together. The menu for our super easy three course dinner is as follows:

Appetizer: Berry Spinach salad with Strawberry Vinegrette
Main Course: Lemon Garlic Chicken with baby Roasted Potatoes
Dessert: Watermelon Grannita
Berry Spinach Salad with Strawberry Vinaigrette Recipe
Ingredients
For Salad:
1. 12 oz Baby Spinach Leaves
2. 1 1/2 cups fresh strawberries sliced (the fresher the better but frozen and thawed is fine as well)
3. 1 cup fresh blackberries chopped
4. 1 cup walnuts, roasted and chopped into chunks
For Dressing:
1. 1/4 cup cold water
2. 1/4 cup olive oil
3. 1/4 cup red wine vinegar
4. 1 1/2 cups Strawberries, hulled and chopped
5. 2 tablespoons honey
Instructions
For dressing:
In a blender, mix together water, olive oil, vinegar, strawberries and honey until smooth. Refridgerate for up to 1 week.
For Salad:
In a large salad bowl, toss together spinach, walnuts, strawberries, and blackberries. Plate and top with dressing.
Lemon Garlic Chicken with Roasted Red Potatoes
Ingredients
1. 6 tablespoons olive oil
2. 2 lemons, 1 thinly sliced, 1 juiced
3. 4 cloves garlic, minced
4. 1 teaspoon salt
5. 1/2 teaspoon freshly ground black pepper
6. 8 small red potatoes, quartered
7. 4 chicken breasts
8. Lime juice
9. Salt
Instructions
1. Preheat oven to 400℉ (approx. 200℃). Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
2. In a medium bowl, cover chicken with lime juice and sprinkle on salt. Cover and let sit for ten minutes before washing thoroughly. This helps to cut the rawness of the chicken.
3. In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the chicken, and potatoes and toss to coat. Pour this mix into the pan and spread around evenly.
4. Roast for 50 minutes or until cooked through. Serve warm.
Watermelon Granita Recipe
Ingredients
1. 4 cups cubed seedless watermelon
2. 1/2 cup sugar
3. 2 tablespoons lime juice
Instructions
Purée all ingredients in a blender. Pour into a 9- by 13-inch dish and place in the freezer. Stir with a fork every 30 minutes until mixture is slushy (up to 2 1/2 hours).
