Lately, I have become obsessed with quinoa. Not just for its delicious taste, but also for its versatility in various recipes, from savory to sweet. For the past month, I have made many recipes with quinoa. My enthusiasm for this ancient grain spiraled from a blog I found, called SimplyQuinoa. Almost all of her recipes incorporate some form of quinoa. I have also searched for other quinoa recipes. Quinoa is very nutritious and is one of the most protein-rich foods. According to MindBodyGreen, quinoa contains almost twice as much fiber as most other grains, and it is rich in iron, manganese, lysine, magnesium, and riboflavin (B2). I’d like to share eight of my favorite recipes with this yummy superfood.
