We've all been there.
It's a Friday night. You're binge-watching Netflix and you're taking a little break from all that eye-strain. You're hungry but you're too lazy to cook something real and substantial. You're craving something warm and filling, but not too much to keep you awake all night with a bloating feeling. Comfort food made quick and easy with the use of frozen vegetables, canned foods and noodles. Just make it before you watch your favorite TV series or movie so you won't need to get up. Take a look at a few comfort food recipes I found that would make a weekend Netflix-watching marathon into a great night-in with paradise in a bowl:
1. Scallion Pancakes
Scallion pancakes are a very popular dish in China and many other Asian countries. With only a few ingredients, namely green onion, flour, water, oil you can make your own crispy flaky goodness at home. It is definitely a go-to snack or quick light meal if you plan to watch sports or a show on TV and eat dinner at the same time. By substituting the lard that is traditionally used in this dish for canola/vegetable oil, scallion pancakes would be a great vegetarian option.
2. Eggless Cookie Dough
Are you one of those people that really enjoy scraping the sides of the mixing bowl after making a batch of chocolate chip cookies? Raise your hands, don't be shy. Mass confessionals are good for the soul. But if you're anything like me I freak out over the fact that eating raw eggs would give me salmonella and make me feel unwell. Well, problem solved: I present to you Eggless Cookie Dough! You get the sinful pleasure of eating cookie dough without the worry of consuming raw eggs. This is certainly a must-try recipe.
3. Campbell's Easy Chicken Pot Pie
"Campbell's chicken noodle, possibilities!" At least, that's what I think of when I hear Campbell's. This is a perfect all-in-one meal for those who want something extra hearty and comforting to eat while watching Netflix.
