More Gluten Free Foods Needed

As many of my close friends know I cannot eat gluten due to the fact that I have celiac disease. Although this is a widely growing disease the options for food in which students have at my school are nowhere near what they should be. My freshman year I was shown a room filled with frozen foods that I could ask to be warmed up upon entering the cafe. However, these items can take thirty minutes to make and eating between classes or even with friends who do not share this issue, thirty minutes is hard to plan for. I was also given the choice to make a meal plan months at a time, planning out each day what I would like to eat. If anyone who is reading this can do that then ignore this next statement. Although, anyone who cannot how in the world does a school expect me to plan out my meals for an entire month. Having the same few limited choices. If I am not feeling pizza the day I picked for pizza then I would have to fend for myself anyway and would waste that food. On top of the cafe not having food that I am able to eat, my school has two shops open one being a local one where you use your ID to purchase other food when there is nothing to eat in the cafe. And the other is subway. Neither of these shops have gluten free choices. Subway could easily freeze bread and clean off a knife as well as the surface if they had a student who needed gluten free attention. As well as the other shop goes out of their way to make their food items not gluten free. Such as their boneless chicken wings which are usually gluten free, yet the school puts breading on them. For someone who pays a lot of money for a mandatory meal plan there needs to be better choices for what students with diet restrictions can eat. It is unfair to expect students to pay at least 2800 dollars for a meal plan when all they can eat is salad. There needs to be more attention brought to the eyes of the food services that decide which food to provide as well as to the schools local shops so that students with allergies are not being starved and over paying just to have to spend money out of pocket on food they can actually eat.

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
