Square-shaped Peanut Butter Moonpie Recipe (Dairy-Free!)

Ingredients

  • 2 Tbs Shortening
  • 1 Pack Chocolate Chips (2 cups) (We used Nestlé Toll House Simply Delicious Semi-Sweet Morsels made with only 3 ingredients)
  • Honey Maid Graham crackers
  • Jif Whips Creamy Whipped Peanut Butter

Directions

  • Use non-stick cooking tray or cover tray with wax paper
  • Snap graham crackers in half, spread them with whipped peanut butter, and stick them together, making peanut butter sandwiches. Place them each on the cooking tray.
  • Put chocolate chips and shortening into medium-sized heat-proof bowl. In a larger heat-proof bowl, pour hot/boiling water about a quarter-full so that when the smaller bowl is placed inside the larger bowl, the water will come about halfway up the side of the smaller bowl. DO NOT get water into the smaller bowl; it is only used to heat the chocolate/shortening mixture.
  • Carefully stir the chocolate chip/shortening mixture with rubber scraper until fully melted. Remove the smaller bowl from the larger bowl.
  • Using tongs, dip each graham cracker sandwich into the chocolate mixture, making sure the whole sandwich is covered in chocolate. Place back on cooking tray
  • When all are covered with chocolate, immediately place tray in refrigerator.
  • Chocolate coating should harden in about 15-20 minutes. Remove moonpies from tray as desired and enjoy!
