When the holidays roll around, many people have one thing on their minds…dessert. And if you are anything like me, you like recipes that are easy, simple and contain ingredients that are already in moms' pantry.

One thing that I have found myself making this season is Apple Turnovers. You can eat them alone, with a sugar glaze drizzled over the top or my favorite way, with ice cream.

So here is my simple recipe:

For the dough you can either make it at home or buy pre-made puff pastry. If you are going to make the dough from scratch, then you will need: 2 cups of flour, 1 teaspoon of salt, 2/3 cups ice water and 8 ounces cold (un)salted butter.

  1. Mix the salt and flour, then pour out on work surface.
  2. Take a teaspoon or two of water at a time and mix it in.
  3. Knead the dough until it sticks together into one ball.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Prepare your butter by cutting it into little cubes.
  6. Remove the dough from the fridge and knead it and the butter into a single ball.
  7. After it is combined, wrap in plastic wrap and put back in the fridge until you are ready to use it.

Now for the best part, the filling. You will need 4 apples of your choice. Use Granny Smiths for a more sour turnover or Gala for a more crisp flavored turnover. Cut up your apples and put them in a bowl with water and a little bit of lemon juice, so they do not brown before you get to use them.

Most people suggest to peel them, but honestly, it depends on preference.

For the next steps you will need: 2 tablespoons butter, 1 cup of brown sugar, 1 teaspoon ground cinnamon, 1 tablespoon cornstarch, a tablespoon of water and your pre-cut apples.

  1. Melt your butter in a large skillet and then place the apples, after they are drained, into the hot skillet.
  2. Cook for two minutes, stirring occasionally.
  3. Add brown sugar and cinnamon, while continuing to cook for two to three more minutes.
  4. In a separate bowl, mix together cornstarch and one tablespoon of water, then pour into the skillet.
  5. Mix continuously while cooking for another minute, until your sauce has began to thicken.
  6. Remove from heat to cool slightly.

Now that we have our dough and filling made, set your oven to 400 degrees and began to assemble your tasty dessert.

  1. Roll out pastry and cut into squares to size any size of your choosing.
  2. Spoon apples into middle of square.
  3. Fold square in half, into a triangle shape and press the edges together to seal.

Wait 25 long minutes and your tasty dessert will be ready to eat!

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.

Top 10 Reasons My School Rocks!

Why I Chose a Small School Over a Big University.

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
