Lately it seems that the population has been shifting towards a more health conscious lifestyle whether it be for weight issues or just a happier, healthier self. They’re eating less fast food, joining a gym, participating in more 5k’s, triathlons, marathons, and trying different diets, such as the Paleo or Whole30 diet.
You may have heard of the term “superfood” which is defined as just what it sounds like: “a nutrient-rich food considered to be especially beneficial for health and well being”. Many diets include all the superfoods just because they are so good for you. There are even some studies that show superfoods are filled with antioxidants that are thought to ward off cancer and the healthy fats that the brain needs to function.
Blueberries
These little, nutrient-rich berries are normally top of the list in terms of what fruit is best to eat. They contain many vitamins that strawberries and cranberries also have.
Beans
Beans are great for your health and easy to make! Coming from a college students perspective, nothing is better than having a short prep time for a healthy meal. There are also many types of beans, so if you don’t like black beans try pinto beans! They are packed with low-fat protein that will keep you full longer.
Quinoa
The word that no one can spell or pronounce…. Quinoa (keen-wah) is cooked the same way as rice and couscous, even though it’s technically not a grain. It is jam packed full of protein, vitamins, and minerals and makes for a great carb portion of your meal.
Nuts and Seeds
These are great for you! Also very convenient to grab a bag for class or if you’re on the run, but watch out… Although they are filled with healthy fats, even too much healthy fat is a bad thing.
Kale
What the heck is all the fuss about Kale?? Well, Kale is a leafy green in the same family as collards, spinach, cabbage, etc. and it’s packed with vitamins A,C, K, as well as fiber and calcium. Kale also has almost no calories so you can fill your stomach with a bunch of Kale and not feel guilty after eating! I normally make Kale chips in the oven, which I will add salt, pepper, and olive oil to before baking, which adds a little more flavor.
Sweet Potatoes
Since NC is the “sweet potato state” take advantage of NC’s delicious sweet potatoes! They’re full of fiber and vitamin A. They are naturally sweet so no need to add brown sugar or butter.
Salmon
This is one of the best fish to have. Not only is it easy to cook, but you can also eat it raw (on sushi typically) or smoked. It has a lot of omega-3 fatty acids, which helps to lower your risk of strokes. While fresh caught salmon can be expensive, there are other options for buying fish. Look at local grocery stores for coupons or sales and take advantage of those!
