6 Comforting Fall Recipes To Add To Your List This Year

It's almost the best time of the year!

There is something about typical fall food that offers an automatic comfort level to your day-to-day life. I love to cook and bake, so I'm looking forward to trying out some new home-y recipes with my roommates this year. Here are some on my list:

1. Chicken Pot Pie Soup 

Chicken pot pie is something my mom used to make me at home that I miss all the time - especially when she took the time to make the noodles homemade (our version tends to be different than others, it's more of a soup than a casserole). Plus, with soups, they tend to last for more than one meal and get better the longer they sit. I feel like you can't go wrong with this chicken pot pie soup. I can't wait to try it!

2. One-Pot Cajun Chicken and Sausage Alfredo Pasta

I am SUCH a sucker for Alfredo pasta so I am so excited to try this one out. Plus this recipe has a little more spice and protein to it than a typical Alfredo. You could also adjust what proteins you use (I'll probably do one or the other, not both) and the spice factor pretty easily and with it being a one pot meal, clean up should be a breeze. You should add this one-pot cajun chicken and sausage alfredo pasta to your list!

3. Crockpot Chicken and Stuffing

One of the goals I made for myself this semester was to utilize my crock pot more! I used it maybe twice last semester so I wanted to use it weekly if possible because come on, who doesn't want to come home to dinner already done. This crockpot chicken and stuffing sounds delish and easy to assemble. Personally, I won't be adding the veggies into the crockpot but cooking them on the stove to serve.

4. Potato Soup

Oh, what a guilty pleasure. Potato soup is just a big bowl of comfort. The restaurant O'Charley's makes my favorite so this copycat baked potato soup recipe has me all sorts of excited.

5. Creamy Chicken Enchiladas

Y'all let me tell you, I made this last week and it is SO good! I know it's not exactly correlated to fall but it's too good not to share and it is super easy - especially if you get the rotisserie chicken. Even the sauce comes together really easy. These creamy chicken enchiladas are a definite keeper!

6. Crockpot Cinnamon Roll Casserole 

I've seen this on Pinterest several times over the last couple years and this fall I will try it. It would be so nice waking up to the smell of cinnamon-y goodness. Plus you just put everything in the crockpot so you can't really go wrong with this cinnamon roll casserole.

Cooking is a favorite pass time of mine and I can't wait to embrace it as the cooler months roll in. Hopefully, some of these recipes can motivate you to do some cooking of your own this fall. If you're ever struggling for ideas, I find all of mine on Pinterest. Happy cooking friends!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots.
