Here are a couple staple foods from my house that are absolutely delicious and have plenty of calories to keep your heart happy. The great aspect about these recipes, and most of mine in general, is that you can easily swap out ingredients. If you choose not to use steak, try chicken or even try making the chili vegetarian. However, these dishes do taste quite delectable as the way the recipes instruct them to be made.
Lea Crockpot Chili
Ingredients needed
1 pound ground turkey
a jar of tomato sauce
2 cups of kidney beans
2 cups of pinto beans
3 roma tomatos
1/2 teaspoon of salt, pepper, oregano, and garlic powder
1 teaspoon sriracha
Directions:
1.) With the crockpot on the low setting, put the 1 pound of ground turkey in the bottom of the pot and stir in the spices.
2.) Stir tomato sauce, kidney beans, and pinto beans into meat mixture.
3.) Dice the roma tomatoes into 1/2 inch squares and then toss on top of the chili mixture.
4.) The tomatoes will start to cook down within a half hour. Stir the chili every half hour for 3 hours.
When the chili is finished, pour a nice full ladle (or two) into your favorite bowl and then top with cheese, preferably cheddar.
Mom's Stuffed Steak
Ingredients
2 pounds of cubed steak
1 box of Stove Top stuffing
1/4 cup of Worcestershire sauce
1 tablespoon oregano
1 can of beef gravy
1/3 cup of butter
1 1/3 cups of water
5 toothpicks
Directions
1.) Preheat over to 350 degrees
2.) Follow directions on Stove Top box to cook stuffing.
3.) Cover the steak in plastic wrap and then with a meat mallet, tenderize steak on both sides
4.) Spread 1/8 cup of Worcestershire sauce on one side of the steaks and then flip the steaks and pour the remainder of the sauce on them.
5.) Sprinkle the oregano on both sides.
6.) Evenly spread the stuffing across the steak on one side. Roll the steak up and then put toothpicks across the roll up to make sure it does not open when in over.
7.) Put steak on a non stick baking dish.
8.) Top steak with the entire jar of gravy and then cook for 20 minutes.
Enjoy my mom's stuffed steak and serve with your favorite vegetable. Broccoli and asparagus accompany the steak very nicely.
