Finding the balance between cooking and eating healthy

A lot of fitness trainers will tell you that part of your health journey begins in the kitchen. Following up on my discussion on eating the right kind of calories to be healthy, I decided to include a cooking video of my friend Mallory and I making stuffed bell peppers with stuffed mushrooms with a side salad. It was super delicious, check out the recipe for ingredients below!

1 Bell Pepper (generic, 100 grams = 20 calories)

3-4 oz of Ground Turkey (4 oz = 160 calories)

0.3 cup of Shredded cheese (I go with sharp cheddar – 110 calories for 0.3 cup)

2 tbsp of Taco Sauce (Ortega Taco Sauce – 2 tbsp(16 g) – 20 calories)

One pre-made stuffed mushroom from Winn Dixie(50 g) = 25 calories

We cooked the ground turkey on a skillet until the meat was nice and brown and we put the bell peppers in the oven for about 25-30 minutes at about 350 degrees to make them a little softer. We didn’t quite put them in long enough this time around, but they were still delicious!

Salad – pretty self explanatory, but I can tell you what I put on mine :

50/50 blend spinach & Spring Mix (1 oz/2 cups = 7 calories)

Turkey sandwich meat slice (1 slice = 20 calories)

Tomato (1 oz = 5 calories)

Red onion (1 slice = 6 calories)

Mild Cheddar Jack Grated Cheese (0.2 cup = 100 calories)

Avocado (1/2 oz = 23 calories)

Simply Dressed Lemon Vinaigrette (2 tbsp = 90 calories)

The grand total of this meal goes to 585 calories, with 42 grams of Protein, 38 grams of Fat, and 20 grams of Carbs. Not bad.

We are all born to do something great. Whether that be to grow up and become a doctor and save the lives of thousands of people, run a marathon, win the Noble Peace Prize, or be the greatest mother or father for your own future children one day.
