How To Make A Killer Breakfast During Quarantine, Even If You’re Not The Best At Cooking

So you're stuck at home and have a morning class or need to get to work. You're hungry and can't get to the grocery anytime soon. Here's hoping you can make at least one of these easy nutritious breakfasts, even with no cooking skills.

One of my favorite things to make for breakfast is some kind of toast. Toast is a great base for any kind of toppings, spreads, or even just butter. These three different toast ideas are guaranteed simple and tasty.

#1 The Infamous Avocado Toast

You will need:

  • Bread of your choice (wheat, white, sourdough).
  • An avocado
  • Toppings you would like.. I suggest these: feta cheese, olive oil, peppers, tomatoes, onions, cilantro, goat cheese, red pepper flakes, etc.
  1. Toast 1-2 slices of your bread in a toaster, if you don't have a toaster, you can use an oven to warm up the bread, or just leave it untoasted if that's not your style.
  2. Take your ripe avocado and slice it in half, you can use the whole thing if you have thick bread, or save the other half for later with aluminum foil or a tupperware container.
  3. Scoop the avocado onto the toast and smash or spread on using a fork or a knife.
  4. Add your toppings, even salt and pepper make this toast great.

Enjoy!

#2 The Hummus Toast

You will need:

  • Bread of your choice (wheat, white, sourdough)
  • Hummus, or if you know how to make your own go ahead!
  • Toppings: feta, goat, olive oil, roasted red peppers, pesto, garlic, etc..
  1. Toast as usual.
  2. Spread hummus on to your toast.
  3. Add your desired toppings!

It's ready to eat. :)

#3 The Banana Nut Butter Flatbread

You will need:

  • Bread of your choice.. You can use a sweeter bread like cinnamon or brioche for this or any others work fine.
  • Peanut butter, Almond butter, Cashew Butter, or any other nut butter you can or will eat.
  • Optional: a banana.
  • Toppings: chocolate chips, toasted coconut, honey, agave, cinnamon sugar, dates, chia seeds, flax seeds, granola, etc..
  1. Toast or warm bread.
  2. Spread your desired butter onto the bread.
  3. Slice up a banana if you would like and lay it onto the bread.
  4. Add your toppings and eat!

#4 Granola fruit bowl

You will need:

  • Fruit! Good combinations for this recipe include: Berries ( blueberries, raspberries, strawberries, black berries), Strawberry & Banana, Banana and Dates. But go ahead and try whatever you would like.
  • Yogurt if you want
  • A bowl (duh)
  • A spatula or a similar utensil
  • Some sort of frying pan or stovetop pan
  • Dry oatmeal
  • Assorted nuts, dried fruit, and seeds (add ins)
  • Maple syrup
  • Spices such as cinnamon if you would like
  1. Place either frozen or fresh fruit into a bowl, cut up and ready to eat. If you want yogurt then put this either before or after the fruit, up to you :).
  2. Place your stove top pan on your stove and put it on low, then add your desired amount of dry oatmeal for the granola.
  3. Stir until it begins to golden, then add nuts, assorted add ins, or spices
  4. Then turn off your stove and pour in maple syrup, about a tablespoon or more, and stir until it begins to evaporate and mold the granola together.
  5. Place your granola on top of your fruit, add any other toppings you want and enjoy!

If you happen to not have any of these things or none of these sound appealing, my advice for those struggling to make a healthy, easy breakfast or meal is this: Be creative! You know more than anyone what you like or what goes well together. Make your own cheese platter with crackers. Make a fruit salad or smoothie with whatever sounds good! Don't be afraid to try new things with the ingredients you have because even the simplest meals can turn out great. Also, use apps like Pinterest, Instagram, or TikTok for inspiration. Lots of people are cooking and learning to cook during this break and it's a great skill to have. Even if you burn something, mess up, or it tastes really awful, at least you can say you went out of your way to learn a new skill, and that's the kind of mindset we need during a time of boredom and self reflection. If it's not cooking, then don't give up on trying something else that's new to you, you have so much time to mess up and learn in the comfort of your own home. Use it. You've got this!
