Avocado toast has exploded recently. It’s hard not to see a picture of it on a cooking magazine or as a dish on a restaurant menu. It started off as a healthy meal and has turned into an obsession. Many chefs and cooks are creating their own variations of the toast.

I love avocado toast because it’s quick to make, delicious, and healthy. From YouTubing, Pinterest scrolling, and flipping through cooking magazines I have found and tried many different avocado toast recipes. From savory to sweet these three are my favorites.

1) Classic Avocado Toast:

Starting at the top of the list is the classic avocado and egg toast. Eggs and avocado are a match made in heaven and this toast is simple and satisfying.

Ingredients:

1/2 avocado

1 egg

1 slice of bread

Salt and pepper to taste

1 tsp of lemon/lime juice

Directions:

Toast your bread

Slice your avocado in half and spread half of it on the toast

Prepare your egg however you like it (I like over-easy)

Add salt, pepper, lemon, and lime juice all to taste

Enjoy!

2) Sweet Avocado Toast

If you love strawberries and have a sweet tooth then this toast is for you. The mix of strawberries, avocado, and black pepper is simply delicious.

Ingredients:

1/2 avocado

1 slice of bread

1/4 cup of strawberries

Sprinkle of feta cheese

Black Pepper

Balsamic

Directions:

Toast your bread

Slice your avocado in half and spread half of it on the toast

Slice your strawberries, and then add them to the toast

Add a sprinkle of feta cheese, black pepper, salt, and balsamic

Enjoy!

3) Italian Avocado Toast:

Caprese Salad is loved by many and add avocado and a slice of toast to it and trust me when I say it is to die for.

Ingredients:

1/2 avocado

1 slice of bread

1/4 cup cherry tomatoes

1/4 cup mozzarella cheese

Balsamic

Olive oil

Basil

Directions:

Toast your bread

Slice your avocado in half and spread half of it on the toast

Slice your cherry tomatoes in half and then add them to the toast

Add mozzarella cheese, olive oil, balsamic, black pepper, salt, and basil

Enjoy!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
