Ah yes you heard me, fall is in the air. (well not for me living in Miami) so i’ve been forced to make the best of the situation and make sure that everything coming out of my kitchen has a hint of pumpkin spice in it. Here listed below are my go to fall favourites, that i've memorized like the back of my hand.
Pumpkin Pie Overnight Oats
Overnight oats has always been a personal favourite of mine, but what if i told you by adding a quarter cup of pumpkin that it’s going to taste like and be the identical texture to pumpkin pie.
Start with a 1/2 cup of oats, a half cup of almond milk, a spoonful or two of greek yogurt, a tablespoon of maple syrup, and a teaspoon of chia seeds. Mix it up and throw in the pumpkin and pumpkin pie spice (some vanilla protein powder is never a bad idea either). BAM AUTUMN IN A CUP. Throw the goop in a mason jar and let it sit overnight. Tomorrow morning you got a grab and go breakfast, I typically like to top it with some walnuts or cranberry sauce. YUM

Sweet Potato Bowl
Greek yogurt and granola is an awesome combination but what if I told you greek yogurt and mashed sweet potato with maple granola is the best pairing in the world. Mash that sweet potato up with as much almond milk as needed, pumpkin pie spice, and a splash of vanilla. Finish that off with some chopped up apple or banana, mixed nuts, or nut butter and you have a bowl full of vitamin A and smart carbs.

Baked Carrot Cake Oatmeal
I mean who doesn’t wanna eat dessert for breakfast? Oats are the best breakfast for someone who doesn’t wanna a case of the mid class tummy rumbles. I find they fill me up and keep me going all the way until lunch; however, plain old steel cut oats can be such a boring meal. Combine 3 cups of rolled oats, cinnamon, allspice, salt, and a teaspoon of baking powder in a bowl and in a separate bowl stir together 2 eggs, and about a quarter cup of brown sugar, and pure vanilla extract. Pour about a cup and a half of coconut milk and 1/4 cup of coconut oil into the sugar mixture then fold them all together. Now throw all the carrot cake toppings in that you can think of, raisins, grated carrots, pecans and stir it all until evenly distributed. Pour your oat mess into a 9 inch pan and bake at 350 for around half an hour, and you’ll wind up with a block of grab and go oatmeal.

Sweet potato, Black bean, Avocado Breakfast Burritos
I am a firm believer there is no better invention than the breakfast burrito. Carbs, healthy fats and protein all rolled up into a beautiful warm tortilla blanket. These are super straight forward. Get yourself some wholewheat tortillas, and sweet potatoes, after baking them in the oven get them all mashed up. In a separate bowl mix those black beans with some cumin, chili powder and red pepper flakes. (Pinto beans are bomb too). When ready, heat that tortilla up, and lay down the sweet potato, beans, avocado, and some cheese (if you’re not violently lactose intolerant like myself). Roll 'er up and do what you want from there with it. You can keep them in the freezer, and just heat them up at 300 degrees when in a rush on school mornings.

Apple Cinnamon Protein Pancakes
Don't read the word pancakes and shy away because this is honestly the fastest recipe of all time. A scoop of whey, a mashed banana and some eggs in a pan are going to make some of the most unreal, low cal pancakes you've ever had. Considering it’s fall however, we should spice things up a little. After mashing your banana and stirring in your egg and protein powder toss in a 1/4 cup of almond milk, some nutmeg and cinnamon and one 1 medium apple, finely chopped (peeled if that’s your thing). Just like that you have yourself a stack of fall inspired pancakes. I like to top mine with some nut butter and maple syrup but whatever your heart desires is probably going to taste unreal.
