How many times have you left the dining halls feeling unsatisfied, underwhelmed, and often complaining about a stomachache? As much as we can all agree that the dining options on Creighton’s campus may not necessarily live up to our mothers’ home cooked meals, I can personally tell you that there is hope. I have listed out some options for meals that can in fact be made in the Brandeis dining hall, and are surprisingly delicious. They are filling, nutritious, and incorporate a variety of fun flavors. Another great aspect about these meals is that they are so customizable. If you don't like something mentioned, you can always swap it out for another ingredient. This flexibility allows you to avoid getting bored of what you are eating, especially since most of us eat at a dining hall for the majority of our meals. If you are looking for a way to save money and really get the most out of your meal swipes, than these are great options for you.

1. Homemade Chipotle Bowl

Combine brown rice, black beans, lettuce, salsa, corn, tomatoes, and grilled chicken in a bowl. Add some southwestern dressing from over by the salad bar, and any additional toppings that you enjoy. If you're really lucky, they might even have some guac available. ;)

2. Grilled Chicken Salad

If you didn't already know, the Grill Station in Brandeis serves grilled chicken breasts. This is a great way to incorporate some lean protein into your diet, since you likely aren't fulfilling your daily requirements while being away at school. I love this “recipe” because it really isn't even a recipe at all, it is so versatile. All you need is some spinach, dried cranberries, sunflower seeds, cucumbers, grilled chicken breast, and either balsamic or raspberry vinaigrette. From there, you can be as creative as you like. Mix and match to whatever sides they have available that day, and enjoy!

3. Celery, PB, & Raisin dippers

These are always a classic. I like to think of them as the adult version of the “Ants on a Log” snack that we all loved when we were kids. Whenever I finish a meal and am in need of a little something “extra”, this is what I go for. Simply take some sticks of celery, spread peanut butter on top, and then sprinkle some raisins. Easy and delicious.

4. Toasted Caprese Panini

If you are craving a sandwich, but don't want the stomach pains that usually come after eating one of the pre-made ones in Brandeis, I would definitely recommend you try this Caprese Panini. It is sort of a more sophisticated version of the classic grilled cheese. All you have to do is go up to the sandwich area, and tell them what you want. I would recommend getting provolone & mozzarella cheeses, spinach, tomato, and a drizzle of balsamic. Ask them to toast your sandwich, and they will be happy to make it a panini for you!

5. Asian Salad with Sriracha

Why spend extra time and money ordering Chinese takeout, when you can make an equally delicious version at the dining hall? I know that it may sound tempting to just order food in, especially after spending hours doing homework or in class. But by taking the little extra effort to be creative in Brandeis, you will find that your tastebuds (and waistline) will thank you as well. In order to make this light and fresh Asian Salad with Sriracha, all you have to do is: combine spinach, mixed vegetables, tofu or chicken, sesame vinaigrette, dried cranberries, sunflower seeds, and some wonton crisps. Add on any other toppings that you like, and viola! Oh, and don't forget to add a drizzle of Sriracha for a little extra heat.💃🏼

I was asked so many times why I wanted to go to a small school when a big university is so much better.
