5 Simple But Delicious Meals That Are College Student Friendly

Since I am living off-campus for the first time, cooking has become something I am not used to.

Now that I am starting to cook in college, I have gotten used to a few staple meals. One thing I have learned is that a Crockpot will become your best friend because all you do is put it on in the morning, go about your day and it is ready to eat once you get back. Plus, by using a Crockpot you have to worry less about dishes and only one big container, so using a Crockpot is a huge win-win situation. I decided to compile a few of my favorite recipes both with the Crockpot or other quick meals that are easy to make and delicious.

Chicken Teriyaki Pita

One of my favorite lunch meals is a Chicken Teriyaki Pita. For this meal all you need is some chicken, Teriyaki sauce, Garlic Powder, peppers, Pita bread and Provolone. All I do for this meal is cut up my chicken the put it into a bowl with Teriyaki sauce and Garlic Powder to let marinate for a little bit as I cut up my peppers. Once you are done with that, throw it all into a pan to cook. When everything is cooked through, I put the Provolone on the Pita and pour everything over, in which the cheese melts from the heat.

Crockpot Meatballs

One of the easiest things to make is Crockpot meatballs because it is only three ingredients. All I use for this recipe is frozen meatballs, Chili sauce and grape jelly. With all these ingredients, you mix into the Crockpot and cook on high for two hours. I usually eat my meatballs with Macaroni Salad or potatoes.

Crockpot Tortellini

Another very easy three ingredient recipe is Crockpot Tortellini. For this recipe, I buy frozen cheese tortellini, Alfredo sauce and some medium salsa to mix all together then cook on high for two hours.

Ground-beef Stuffed Peppers

Another recipe I find very easy to cook is stuffed peppers. Usually I stuff the peppers with ground-beef, onions, shredded cheese with seasonings like Cumin and Italian. It is super easy to mix all together and it does not take very long to cook.

Crockpot Tacos

One of my favorite recipes is Crockpot Tacos, especially when I am in a crunch. Usually I pick up a Rotesserie chicken from the store to pick all the meat off then put into the Crockpot with taco seasoning and chipotle peppers. Since the chicken is already cooked, the time needed is only for the flavor to sink in. Of course once it is cooked, you can have all your fixings on the side and enjoy!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.
