6 Egg Dishes You Need To Make At Home

Another month of quarantine, another month of making new foods. And if you're like me, you miss travelling and might have a few extra eggs in the fridge. Open up your kitchens, because here are some delicious, cultural, and (mostly) simple dishes with eggs that are worth the try at home.

1. Stir-Fried Eggs and Tomatoes

This delicious Chinese dish combines scrambled eggs and flavorful tomatoes for an easy dish at any time of day. This food has always been a staple in my family ever since I was a little. You can eat it with any meal, but my family usually pairs it with Chinese breakfast porridge. The best thing is that you only need two ingredients to make this dish!

2. Breakfast Sandwich

After quarantine started, I couldn't buy my breakfast sandwiches for a while. To solve that, I started making my own from home. Breakfast sandwiches are so delicious and have so much varied flavor. They are made so much better by adding some protein-filled fried eggs. This American dish is especially simple because you can put anything you want onto your sandwich.

3. Souffle

Souffles are an awesome French dish to enjoy for breakfast. They have an amazing airy texture and you can choose what to add for the souffle's overall flavor. I love adding ham or spinach for its salty flavor and added texture. Even if you don't own a ramekin, you can use muffin pans to make this in the oven!

4. Bibimbap

Bibimbap is something that I first tried at a Korean restaurant and have since started to make at home! Like some of the other foods on this list, you can choose what you want in it in addition to the rice base. Over time, I've found that my favorite version of this dish includes tofu, bean sprouts, carrots, and two sunny-side-up eggs!

5. Frittata

This Italian dish is an amazing baked egg dish that you can add just about any meat, vegetable, or cheese to. It's slightly different than an omelet and a quiche, so if you enjoy those, it's definitely worth trying to see if this could be your new favorite dish.

6. Layered Russian Salad

Over quarantine, this layered Russian salad has made some delicious leftovers, and it's a great party food to show off your cooking skills post-quarantine. I have yet to find this exact recipe online. To make it, all you need is to break the following ingredients into small pieces and layer them up. You need cooked salmon, egg whites, potatoes, mayonnaise, carrots, and egg yolks.

These dishes are all relatively simple to make, with ingredients you already have in the kitchen. There are so many different dishes on this list along with so many variations of each dish! The next time you miss traveling or want to cook some new foods, try some of these eggcellent dishes. Something tells me you'll love them!

For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). I grew up with John, Paul, George, and Ringo instead Justin, JC, Joey, Chris and Lance (I had to google N*SYNC to remember their names). The highlight of my short life was Paul McCartney in concert twice. I’m not someone to “fangirl” but those days I fangirled hard. The music of The Beatles has gotten me through everything. Their songs have brought me more joy, peace, and comfort. I can listen to them in any situation and find what I need. Here are the best lyrics from The Beatles for every and any occasion.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.
