Corn Pudding Is My Go-To Fall Recipe — My Grandma Makes It Every Single Year
There is nothing like it.
During the fall season, besides looking forward to celebrating holidays like Halloween and Thanksgiving, one family tradition that I enjoy the most is learning how to make my grandma's recipes.
I love helping to prepare food like pumpkin pie and cranberry muffins. But, my favorite dish to make is corn pudding, also referred to as Masa Mora, which we normally make each year during the beginning of October.
Ingredients:
-6 ears of fresh corn
-1 can of coconut milk
-1 can of condensed milk
-1 teaspoon of vanilla
-1 cup brown sugar
-2 tsp salt
-1 whole egg
-1 cup water
-4 tbsp corn starch
-1 tbsp cinnamon/pumpkin pie seasoning
-a cheese cloth
Recipe:
- To make the corn pudding, she grates corn.
- After the corn is grated, my grandmother sifts the corn using a cheese cloth in order to get the cream out of the mixture.
- Then she mixes it with coconut milk (either sweetened or unsweetened) and condensed milk before adding vanilla, brown sugar, salt, a beaten egg, water, and corn starch.
- Then, she adds a tablespoon of cinnamon or pumpkin pie seasoning for some extra flavor.
- When all of the ingredients are put into a large metal pot (used for casseroles), it is then cooked on medium heat.
- My grandma constantly has to stir to until it begins to thicken. The corn pudding must be cooked on low heat uncovered for a half to 45 minutes.
- The corn pudding is not baked and there is no crust, so it can be cut into pieces or left whole.
- However, it still needs to be refrigerated for a good two hours before eaten.
- Once it is cold enough, the corn pudding can be served either plain or topped with some more cinnamon or whipped cream.
This is one of the best desserts to have after dinner (especially after the fall harvest) anytime of the week. My grandmother loves to make it each year, and I'm glad that she teaches me some of her other recipes as well.
I like corn pudding because of the nutritional benefits.
It is a healthy whole grain with enough carbs, and contains plenty of vitamins, minerals, and fiber. Since I am exercising more and eating healthier foods, this is an alternative choice for dessert second to pumpkin pie. These deserts are tasty, satisfying, and low in fat.
