CoreLife Eatery, a company that specializes in making grain, broth and green bowls from scratch, just opened in Binghamton's University's Plaza.
And let me tell you, it is an incredible addition.
The day before their official opening, CoreLife created a Facebook event notifying local residents and students that their restaurant promoted healthy and active lifestyles. On top of Binghamton University students finding out that there is now a healthy dining option right off campus, the restaurant also offered all students one free meal and drink when they presented their student ID.
That night, my friend and I waited on line in the cold for over an hour and a half, but once we got inside we were so excited. The venue is beautiful, spacious, and overall has a very positive vibe. There are signs around the restaurant promoting living a positive and healthy lifestyle. As we waited on line, multiple employees made friendly conversation with us, asked what we were thinking of ordering and even contributed their own recommendations.
By the time it was our turn to order, we were both starving. However, looking at the wide variety of vegetables and proteins was overwhelming in the best sense. They have a selection of almost every vegetable that you could ever wish for. Their elaborate dressings range from cucumber basil to cranberry vinaigrette.
My first meal there was a Mediterranean Salad. I added avocado, chickpeas, and hard boiled egg, and the additional proteins came with my meal that night. They put the perfect amount of each selection on, and I could tell from my first bite that the produce was fresh and tasteful.
And let me tell you, my salad was incredible. While I have yet to try a broth or grain bowl, I can ensure that from hearing from multiple accounts, they are just as amazing.
Don't even get me started on their drinks. Many options include cucumber basil lemonade, apple cider green tea, and cranberry lemonade. Many mix the drinks and create delicious hybrids.
Although the free dinner was only a one-night opportunity, I am sure that I will be back in the near future to try their other options. To personalize your own salad, you can add two different bases, four ingredients, add a dressing and extra items at an inexpensive charge, cheaper than adding guacamole to your bowl at Chipotle.
I'm not saying we don't all have our Sushi Samba or Five Guys cravings, but I can guarantee you that you won't walk out of CoreLife disappointed. Be sure to check out their menu and stop by their location, they're only five minutes off-campus! As a health-foods lover, I can't help but think about the next time I'll be back.
