I'm Letting You In On The Best Scrambled Eggs Recipe Ever, Hands Down And Forks Up

I have always enjoyed cooking, but my hectic college life doesn't exactly allow me to spend hours crafting meticulous four-course meals. So I've learned to make do and make food in 15 minutes or less. After much experimentation, I can honestly say that this 10-minute miracle dish is THE best scrambled eggs I have ever eaten. Eggs are especially great since they are composed of protein and good fats. Add in a bit of antioxidant-rich moringa powder and red peppers for fiber, and you have a quick and easy way to start your day! The ingredients also have pretty worldly connotations, so if you're looking to impress someone with minimum effort, this is a good bet. If you're looking to treat yourself, it is just as good. Hope you enjoy!

Ingredients

1/2 a large red onion, sliced or diced

1/2 cup red pepper, diced (add more if you want)

Olive or coconut oil

Salt and black pepper

1 tsp coriander

2 tsp moringa powder

2 eggs

Preparation

Pour 1-2 tbsp. of oil into a frying pan on low heat (make sure that there is enough oil to coat the bottom of the pan), and wait for five minutes. Then add in a pinch of salt, the coriander, and the onions. When the onions have begun to brown, add in the red pepper. Wait one to two minutes, then add the moringa powder. Mix the powder thoroughly into the vegetables before adding the eggs and ground black pepper. Then, scramble to your heart's content!

Fun fact: moringa powder is a product of the drumstick plant, or as my family calls it, "murungkai" (Wikipedia spells it one way, my mom writes it another. This spelling is a compromise between the two). It is native to parts of Africa and Asia, and the fruit is great in soups and stews.
