In the last few years, it seems like more and more people are finding a love for avocado even if they didn't eat it often before. It's not just a "trendy" food; avocados are seriously the best. They're so versatile and can easily be added to meals.

Here's a fun fact if you're looking for even more excuses to justify your avocado obsession: they contain high levels of folate which can help regulate sleep, mood and appetite, decreasing the risk of depression. If you're looking for something beyond the now basic avocado toast, read on for these deliciously healthy avocado recipes:

1. Avocado & Watermelon Summer Salad

...Don't save this for summer. Indulge in this when you need an extra boost of freshness. Slice up some fresh avocado, watermelon, cilantro and add in a cheese of your choice if desired. I like to dress this up simply with some fresh lime juice, salt and pepper, but a lot of summer salad lovers like to use a balsamic dressing.

2. Avocado Rolls

Simply the best; a go-to if you're looking for something a little crisper! Combine some avocado, garlic, tomatoes, lime juice, and onions. Season with salt and pepper, then wrap the mixture in a wonton roll and fry in a pan.

3. Avocado Chickpea Salad Sandwich

Mash up some cooked chickpeas and combine with avocado, cilantro, onion, tomatoes, and any other veggies you like. Sub chicken or tuna if you'd like.

4. Avocado Rice Bowl

I didn't link a recipe here because you can really tweak this to whatever you want. Cook up some brown brice and add some sliced avocado, mushrooms, broccoli, or whatever toppings you'd like.

5. Avocado Brownies

I had to throw a desert option in here. A healthier twist on your favorite desert. There are so many different recipes out there for these, so you can find one that almost always will fit with ingredients you have.

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
