The grilled cheese is a delicious food that is easy to make; there is just something so satisfying about biting into a pair of perfectly crisp pieces of bread held together by melted cheese. Have you ever thought of experimenting with different bread and cheeses, or even adding other ingredients to change up this classic sandwich? The possibilities are endless, and the results can be scrumptious. Here are five vegetarian friendly recipes that put a yummy twist on the grilled cheese sandwich and may even inspire you to create other grilled cheese concoctions.

1. Dried Tomato and Spinach

Spread one tablespoon of pesto on a slice of sourdough bread. Lay on the other side of the bread into the skillet and add a slice of provolone cheese, spinach leaves, and sun dried tomatoes. Top off with a second slice of provolone and the other piece of bread, then flip when golden.

2. Apple and Gouda

Lightly butter one side of a slice of white bread and set in the skillet. Then pile a piece of gouda cheese, thin slices of a peeled granny smith apple, and the second piece of bread with buttered side up. Flip when brown, and then enjoy this toasted sandwich made with sweet crisp apples and gooey, smokey cheese.

3. Caprese

Brush the outside of two slices of Italian bread with olive oil. Then spread one tablespoon of basil pesto on the opposite side of one bread slice, followed by layering tomato slices, spinach, and mozzarella cheese. Set the slice into the skillet, olive oil side down. Add the second slice of bread to the top, and flip once the cheese has melted.

4. Blueberry Goat Cheese

Lightly butter one side of each of two wheat bread slices. Spread goat cheese across one piece of bread, and then add blueberries, spinach leaves, and a pinch of basil before setting into the skillet. Top off with the second piece of bread, and toast until golden brown before tasting this sweet and creamy sandwich.

5. Green Grilled Cheese

Take two pieces of wheat bread and brush lightly with olive oil. On one slice, spread one tablespoon pesto, followed by a layer of Swiss cheese, spinach, and avocado slices. Put a second slice of Swiss on top before adding the last piece of bread. Press together gently and cook until the bread is crisp before biting into the savory green grilled cheese.

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace.
