Skinny Lasagna Rolls!

I am a person who lives through Pinterest. And my recipes board is filled with mostly healthy meals to try out! These lasagna rolls have become a family dinner favorite since I first tried them out and they are so simple to make! Try it for yourself!

Ingredients:

Cooked lasagna noodles

10 oz. frozen chopped spinach, thawed and drained

Salt and pepper for taste

15 oz. fat free ricotta cheese

1/2 cup parmesan cheese

Spaghetti sauce

Shredded mozzarella cheese

1. Set oven to 350 degrees

Do this first before starting anything else.

2. Thaw frozen chopped spinach in boiling water, then drain

3. Mix all the ricotta cheese, spinach, and parmesan

4. Spread at least one cup of spaghetti sauce on bottom of baking dish (the size is your choice)

You'll want kind of a thicker layer on the bottom so that you can't see the bottom.

5. Boil 7-9 lasagna noodles

Your pan may fit more so add as many noodles as you feel safe with.

6. Place noodles on wax paper or parchment paper

I highly suggest using wax paper! Makes it easier to roll up

7. Dap excess water off the noodles

8. Spread the cheese and spinach mix on the noodles

About 1/3 cup evenly on the noodle.

9. Carefully roll and place seam side down in the baking dish

10. Spoon sauce over the rolls

11. Top with mozzarella cheese

12. Put foil over the dish and bake for 40 minutes or until cheese melts
