My boyfriend’s roommates request this dish every single time I visit them (which is really often), so I thought I would share with you guys!
Ingredients for Custard
3 eggs
Tablespoon of flour
¾ cup of milk
Whisk these together. It’s super easy.
Ingredients for the rest of the quiche:
2 tablespoons of butter
1 can (4oz) of mushrooms (I sometimes use two)
Alternatively – if you don’t like mushrooms, use some fresh broccoli!
Graham cracker pie crust
Bag of shredded Swiss cheese
One tomato, cut into thin half slices
Fresh basil leaves
In a sauce pan, put like two tablespoons of butter and sautee half a sweet onion (or a whole onion! It’s your life!). When the onions are browned, add a small can of mushrooms (you totally could use two cans if your heart desires).
Put a layer of about half the bag of Swiss cheese on the bottom of the pie crust. Then pour in the pan of mushrooms and onions. Next, pour the custard over the mushrooms until it reaches the top of the pie crust (depending on how many mushrooms you used, you’ll probably have extra).
Sprinkle the rest of the Swiss cheese over the custard, and then create a layer of tomatoes and basil leaves.
Bake at 350 for 35-45 minutes, or until the cheese has a golden brown color to it.
