I have been vegetarian for almost three years now. As a vegetarian, my family always finds it very difficult to find food to cook for me. I don't understand why because all you have to do is not put meat in it, but apparently that's a difficult concept to get around. With Thanksgiving coming along, my mom is constantly asking me "what am I supposed to make for you?" Therefore, I bring you your own personal guide for a very vegetarian Thanksgiving.
Mac and cheese
Mac and cheese is a classic Thanksgiving meal, and does not need to have meat in it at all! You can even make vegan mac and cheese by using dairy-free cheese and milk.
Vegetarian vegetable stew
I don't know if stew is a Thanksgiving food, but we always have some kind of stew for Thanksgiving. An easy way to make any meal vegetarian is to replace the meat with vegetables, and that's exactly what this recipe is! Replace the beef with vegetables and the chicken stock with vegetable stock and there's an easy vegetarian stew that can sit in the crockpot for a few hours before dinner.
Cauliflower stuffing
Stuffing is my favorite Thanksgiving meal, and this stuffing honestly doesn't taste any different than stuffing with breadcrumbs. Of course, breadcrumb stuffing is vegetarian, but this cauliflower stuffing is a little bit thicker and has a crunch to it. Plus, it tastes great smothered in cranberry sauce
Veggie pot pie
Chicken pot pie was another favorite of mine before I was vegetarian. Again, follow this simple rule to make any meal vegetarian: take out the meat and replace it with vegetables.
Vegetarian lasagna
Finally, the meal of all meals: vegetarian lasagna. Lasagna is a favorite of mine, and there is so many things you can do with vegetarian lasagna. You can out mushrooms, bell peppers, vegetarian sausage, tofu. There are so many options!
