I'm just going to start off by saying that I freaking love my veggies but sometimes salad makes me sad.

Vegetables were definitely an acquired taste and I was the first kid in the family to scoff at mom when she said, "When you get your adult taste buds you'll like all this healthy stuff!" Now, it took a little more than growing my "adult taste buds" to be able to veg out, but now that I veg out on the daily, I want all of you fellow adults to be able to enjoy your healthy stuff too.

Here are a few steps to having your veggies, and enjoying them, too. But first, let's just enjoy the view.

It's like you're eating a painter's masterpiece.

Okay so here's a few steps to making your own masterpieces. If you have a microwave, stove top or oven you can make just about any plant delicious.

Step 1. Roasty toast the veggies

To roast veggies you simply put a little oil on them or put them on some parchment paper on your pan then cook them for about half an hour (or until soft) at 350-400 degrees. Then you can add spices, cheese, sauces, meats, bread, noodles, or anything your little heart desires. This is a good way of cooking them because they lose little to none of their nutritional value during cooking and it makes them super tasty!

e.g.

I like to cook mine until they get that nice little black char on them and then toss them in spices

Step 2. Hot and steamy

Another way to cook them so that they keep their nutritional value is by steaming them on the stovetop. You just put water in the bottom pan, veggies in the top, turn on the burner and leave them until you like the way they taste!

Step 3. Nuke 'em

OK, this is the easiest option, I KNOW you know how to work a microwave so you can't play dumb on me here. As a poor college student, the microwave and my dining hall are the two most common ways I get my daily veggie fix. You can get "steam in the bag" asparagus, broccoli, cauliflower, green beans, corn, and even rice in the frozen section of just about every grocery store (Walmart is my dealer) and a lot of them even come pre-sauced in cheeses, teriyaki, butter sauces...you name it, they got it. Then you just pop it in the microwave for about 5 minutes and viola, you have a super healthy snack!

Adulting has a lot of harder obstacles than learning to love your broccoli and Brussel sprouts, try giving them another shot instead of just feeding them to the dogs.

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
