Recently, I have become slightly obsessed with this dish. It is light, fresh, and absolutely delicious. It’s a fun twist on the traditional way to eat cauliflower and it’s also super easy to make.
So, that being said, have this for lunch or as a killer side dish with dinner. Your friends and family will love it and be totally stunned that it is cauliflower and not rice.
Ingredients:
1 head cauliflower
1/3 cup dried cranberries
1/3 cup pumpkin seeds
1/3 cup sliced almonds
1 white onion
1 tbs olive oil
Lime
Lemon
Salt
Pepper
1 handful of chopped Cilantro
Serves 4-6
Directions:
1) Cut the heads off of the cauliflower and prepare the cauliflower into small pieces
2) Roast cauliflower in the oven for 10 minutes at 450
3) Blend the cauliflower in a food processor until it reaches a rice consistency
4) Heat onion and olive oil in a frying pan on medium heat, and add in the cauliflower rice, more olive oil, and stir for about 5-7 minutes
5) Add salt & pepper to taste
6) Transfer cauliflower rice to a large serving bowl
7) Mix in dried cranberries, pumpkin seeds, sliced almonds
8) Add lemon juice, lemon zest, and lime juice all to taste
9) Top off with cilantro & enjoy!
Step 1: Prep & put the cauliflower into the oven
Step 2: Then put the roasted cauliflower into a food processor
Step 3: Blend the cauliflower until it reaches a rice consistency
Step 4: Sauté the white onion & cauliflower in a pan on low heat for 5-7 minutes
Step 5: Add the cranberries, pumpkin seeds, sliced almonds, lemon zest, lime juice, cilantro, and enjoy!!
