Alone on Valentine’s Day? No plans or too tired to make any? Don’t fret! You can still have the evening of your dreams. They say all you need is love, but in reality, eating food is much better than feelings. Here are some jaw-dropping recipes, so you can treat yourself this Valentine’s Day. Who says a dinner for one can’t be fun?


1. Red Velvet Mug Cake

Red velvet is my all-time favorite flavor for any sweet treat! This mug cake is a simple, sweetly-delectable option for one with the same red, Valentine feels to make you feel special. Better yet, it’s microwave friendly, so it's easy to bake with no mess!

2. No Bake Cook Dough Bites

Whether I'm in my feelings or simply craving cookie dough, cookie dough bites are my go-to simple treats since they're ready in minutes and completely safe to eat. They're also perfect for sitting by the fire and reading a nice, long romance novel.

3. Ooey Gooey Chocolate Brownie in a Mug


What’s better than chocolate? In my opinion, Nothing. This recipe just goes to show that chocolate can really make any holiday great especially when it melts in your mouth and only takes a few minutes to prepare!

4. Chocolate Avocado Ice Cream

For those like me who have a wicked sweet tooth but want to stay on the healthy-ish track. This recipe is definitely for you! Frozen bananas are a quick and easy way to make flavored ice cream, and you can avocados for a nice, creamy finish and chocolate chips for a rich flavor. Just thinking of it makes me want to snuggle in bed and binge-watch a Netflix series all night.

Just thinking about this recipe makes my mouth water. This Valentine’s Day, treat yourself to sweet, crunchy and salty deliciousness in 30 minutes or less. After one bite, you’ll only want to eat popcorn like this.

This is an all-time favorite recipe of mine, since it's quick and easy to bake, I often bring it as a party favor to last-minute events! Let me tell you, it's worth every bite! Most of all, blueberry bread is sweet, moist and filling like the perfect pound cake. Eat it by the slice or share it with friends for a Valentine’s Day dessert!

7. Microwave Safe Blueberry Cobbler

I'm obsessed with everything blueberries! This recipe is quick, scrumptious and perfect for those who like a blueberry treat with a generous helping of whipped cream! Better yet, this recipe uses common household ingredients so you won’t even have to leave your house (or your rom-com) to make this cobbler!

8) Nutella Cake!!!

If you love Nutella as much as me, you’re gonna fall head over heels for this Valentine’s recipe. It’s microwavable, and literally takes two minutes to bake! Add your favorite chocolate-y add-ins to put the icing on this very Nutella cake just for you.

9. Sweet Single Serve Apple Pie

When I think about the happiest things in life, Zac Efron, America, and apple pie always come to my mind. Awaken your tastebuds with this sweet, fruity serving of pie. Like most of the recipes on this list, it is pretty simple and easy, but trust me, it is packed with unique flavors like crunchy cookie crumbs and warm melted American cheese (if you like)!

10. Cheesecake in a Cup

After a candlelit dinner for one by myself, I like to end the night with a nice, smooth cup of cheesecake. This recipe is part creamy, part sweet and completely delectable. Add raspberry sauce to create a tangy flavor with lush red holiday undertones. With a quick bake time in the microwave, expect to enjoy this dessert in no time (after letting it cool down, of course).

11. No Bake Strawberry Cheesecake Bites

At the end of a solo night, these frozen bite-sized desserts serve as my ultimate midnight snack. Because these fun-size treats are raw vegan, no need to be health conscious! And no need to stick anything in the microwave. Just stick them in the freezer after preparation and enjoy with friends, family or simply by yourself (that’s the best way to eat midnight treats).
