My top seven of favorite tacos!

If I would have to choose one among all the foolish statements that have come out of Trump’s mouth and accept it, then it would be the fact that there are too many Mexicans in the US. Hey, don’t look at me! I live in TJ. But the good thing is that we are exporting our slaying food, and of course, the most loved is the Taco (angels’ choir in the background). But I’m really concerned about how Americans are eating tacos and the idea they created for them. First of all, you can do a taco of pretty much anything (please don’t put Cheetos, or cereal in the tortilla), and there are four basic types of tortillas: white flour tortilla, whole-wheat tortilla, corn tortilla, and blue corn tortilla (my favorite). But most of the times we call burrito when you use a flour tortilla, and taco when you use the corn tortilla. The key to a good taco is that the tortilla is handmade; the ingredients are fresh; there is a good salsa to join with. Now here is a list of my favorites tacos besides from the ones you can get in a Taqueria.

1. Avocado and queso fresco

This goes well with any type of tortilla. You can add a pinch of salt and some salsa. It is actually really light to eat because this cheese is also easier to digest.

2. Carrots

I know this sounds odd, but I’m not talking about raw carrots. The carrots are stir-fry in a pan with olive oil, onions, salt, and pepper. You put the mix in the tortilla and add some queso fresco, which is the light cheese I talked about, and you can put some lettuce as well and a little bit of sour cream.

3. Mole

This is a bittersweet brown sauce, sometimes is sweeter other times is spicier, it depends on how you like it. And most of the times it goes with shredded chicken, but you can also do it with the famous queso fresco or panela, or with some steamed cauliflower. All of the options above are delicious.

4. Refried beans

This is actually my favorite breakfast, you can do it with a burrito, but mom says is healthier with a corn tortilla, so I don’t argue and do myself a taco. You can add some cheese, but I like to put it lettuce, avocado, and salsa.

5. Salmon

There are many ways to do seafood tacos. But I don’t eat seafood. So here is how I do it. I cook the salmon in the oven with olive oil, salt, pepper, and capers. When the salmon is ready I put it in a tortilla, with… lettuce, and salsa, avocado, and sour cream.

6. Potatoes with soy chorizo

This is also a breakfast or dinner, although it has too much fat, it tastes so good! I don’t it pork, so I don’t do it with the regular chorizo, but the soy option is also good.

7. Rajas poblanas with cream

I should say this chili is not spicy at all, but you might have a different opinion. The dish is made with a type of chili we call poblano, which you have to burn to make it softer, then you cut it and put it in a pan with cheese, corn, sour cream, salt, and pepper. There are a lot of tutorials on how to do it right. And you can have it as a taco!

Just remember that just like there are many types of sandwiches, there are many types of tacos.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.
