If you are craving a heavy, home cooked meal that is bursting with flavor, follow this recipe so that you can indulge in some comfort food within the comfort of your own home. Although this recipe is not vegetarian or vegan, you can substitute the ingredients that you do not prefer with other healthy alternatives.
1. What you will need.
In order to create this recipe, you will need 10 potatoes, one bag of shredded cheddar cheese, a packet of bacon (or a prefered topping), one fresh jalepeño, two avocados, two limes, sour cream, milk, flour, cilantro, scallions, salt, pepper, olive oil, garlic powder and onion powder. You can substitute any of these ingredients for an alternative product wherever you see fit in order to abide by your nutritional needs and preferences.
2. Preparing the potatoes.
Cut the potatoes into small wedges and place them in a large bowl. Once all of the potatoes are cut and placed in the bowl, you will begin the seasoning of the wedges. Add two tablespoons of salt and pepper, one tablespoon of garlic powder and onion powder and drizzle the wedges generously with olive oil. Mix every ingredient into the wedges until each wedge is covered with a fair amount of each product and set the bowl aside.
3. Creating the crema.
In a food processor or blender, add two whole avocados, the juice and zest of two limes, one cup of sour cream, one cup of cilantro, a tablespoon of milk and a pinch of salt and pepper. Blend until the ingredients combine into a sauce consistency and set the crema aside.
4. Preparing the toppings.
If you are using the toppings recommended above, begin by thinly slicing the jalapeño into small fragments and setting them aside. Prepare your desired amount of bacon, as it is a topping to the loaded wedges, chop the cooked pieces into small bite sized portions and set aside. Lastly, cut the scallions into small pieces for garnish and set aside.
5. Baking the wedges.
Place the wedges evenly on a cookie sheet lined with tin foil or parchment paper and set your oven to 400 degrees. Bake the wedges until they become golden brown and look crispy on the outside.
6. Making the cheese sauce.
Once your wedges are baking, you can begin to make fresh cheese sauce. Place four teaspoons of flour and a quarter cup of milk into a medium sized saucepan and whisk to combine. After the flour and milk are whisked and combined, add another three fourths cup of milk then bring this mixture to a boil while stirring it often. Once it has reached a boil, turn down the heat and let simmer for two minutes. After the two minutes, the consistency should become thicker and you can now slowly whisk in the shredded cheese until every ingredient has combined. Add salt and pepper to taste.
7. Putting it all together.
Place the baked wedges evenly on a serving dish and pour the cheese sauce over top. Add the already prepared toppings or replaced toppings that you wish you use and lastly, drizzle the crema over top and enjoy!
