One of my favorite memories from being a little girl is baking with my mom. Whether it was a cake, cookies, brownies, or cupcakes – we always enjoyed getting messy and creating a special sweet treat! The whole house would smell like a bakery and I'd always try to sneak one before dinner. This memory, I am sure, is something most little kids experience with their own parents. Luckily for us, July 9th is National Sugar Cookie Day! Sugar cookies are very simple, very sweet, and very tasty. They are a great dessert for any day, holiday or event. They can be cut into any shape with a cookie cutter and commonly are decorated with icing or sprinkles!

Here is an easy recipe for sugar cookies! Make them today, on National Sugar Cookie Day, and share them with a friend or family member!


Preparation time: 10 minutes

Cook time: 15 minutes

Total time to make: 25 minutes


Ingredients:

  • 2 eggs
  • 2 cups of white sugar
  • 2 3/4 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 1/4 cups margarine
  • 2 teaspoons of vanilla extract
  • 1/4 cup of white sugar for decoration

Directions:

1. Preheat the oven to 350 degrees F

2. In a medium bowl, stir together the flour, baking soda, and salt. Set this bowl aside.

3. In a large bowl, mix the margarine and 2 cups of sugar together until light and fluffy. Beat in the eggs one at a time, then the vanilla. Gradually stir in the dry ingredients (the mix in the medium bowl) and make sure their completely blended.

4. Roll the dough into balls about the size of a walnut and roll the balls in the remaining 1/4 cup of sugar. Side note: Snickerdoodle cookies can easily be made from this recipe by simply rolling the dough in cinnamon sugar at this step!

5. Place cookies a couple inches apart on an un-greased cookie sheet.

6. Bake for 8-10 minutes in the preheated oven and remove when they are lightly brown around the edges.

7. Let the cookies sit for 5 minutes and then move them to a wire rack to cool completely.

8. This step is optional. Decorate the cookies when their cool. Be creative and have fun! Use icing, sprinkles, or anything else that you may find yummy!

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin." But, I get to know most people at my school and I know my professors very well. Not to mention, being able to walk to the other side of campus in 5 minutes at a casual walking pace. I am so happy I made the decision to go to school where I did. I love my school and these are just a few reasons why.
