Dessert is the highlight of a meal, but in this age of dieting and healthy eating you can find yourself passing on any sugary treats. You do not have to sacrifice health over taste. With this blackberry muffin recipe you get to cut your muffin and eat it too. You probably already have all the ingredients in your kitchen. The best part is that these muffins work as a delicious dessert or a beautiful breakfast.
Ingredients:
The recipe yields 10 muffins.
- One 1/4 cup of all-purpose flour
- 1/6 Tbsp. baking powder
- 1/4 teaspoon backing soda
- 1/4 teaspoon cinnamon
- 1 large egg
- 1/2 teaspoon of milk
- 1/2 cup sugar
- 4 Tbsp. of melted butter
- 1/2 teaspoon of vanilla
- 3 to 6 ounces of blackberries
Method:
1. Preheat oven to 400 degrees Fahrenheit.
2. Combine the dry ingredients: flour, backing powder, backing soda, cinnamon and salt, into a large bowl and whisk them together.
3. Combine the wet ingredients and sugar into
the bowl and mix well.
4. Put the batter into muffin cups and bake for 17-20 minutes. Use a toothpick to check if the inside is baked.
5. Let it cool and enjoy!
When eaten as a breakfast it is best with a light topping of butter, or with a nice bowl of cereal, but as a desert, a scoop of ice cream tops it off.
