With Thanksgiving right around the corner, you're wanting to prove to your mom that you are somewhat self-sufficient and can make something other than ramen and microwavable mac n' cheese. Don't we all? Here's a few "easy peasy lemon squeezy" side dishes (made in less than an hour) that will make the whole table think you actually did something difficult. Little do they know.
1. Stuffed Portobello Mushrooms
When in doubt — stuff. This easy side only takes a total of 26 minutes to make, making it the perfect last-minute dish. Buy as many portobello mushrooms as you need to have at least one for each guest, hollowing out the mushrooms, and then filling each mushroom with bread crumbs, parmesan cheese, and a slice of mozzarella. Pop them in the oven and in less than thirty minutes you will have an easy and extremely tasty side dish to impress mom.

2. Three Cheese Asparagus Gratin
Cheese is a trusted crowd pleaser each and every time. Throw some cheese on some vegetables and even the kids' table will be asking for seconds. This dish is super simple and only has four main ingredients, meaning your last minute effort to prove to mom that you are self-sufficient only requires what you probably already have in your fridge. Another bonus? Only takes 25 minutes to make!

3. Twice Baked Sweet Potatoes
Nora Rushev runs her food blog Savory Nothings which brings super easy, non-time-consuming dishes, like this one, to the dinner tables of all of her followers. This dish takes an hour total to cook and prepare but if you're wanting to surprise mom, you can do the first bake a day before and then bake the potatoes for the second time before the feast. This dish is sweet and crunchy plus a major twist on your usual sweet potato casserole equals double the shock factor.

4. Cornbread Stuffing
Stuffing is an essential to any Thanksgiving meal so tell mom she can take a seat on the bench for this one. You will be able to make this delicious soon-to-be family favorite in less than an hour and the ingredients won't break the bank as they will probably already be in your fridge and pantry (yes!).

5. Green Bean Casserole
Food Network's Pioneer Woman aka Ree Drummond strikes again with this southern favorite. Bacon, vegetables, bread, and cheese means that not only does this work as a side dish, but makes the perfect meal by itself for Thanksgiving leftovers. While it takes an hour to cook and prepare, the effort will be worth it when you finally get your mom to admit that you are able to take of yourself.
