Most people have heard that breakfast is the most important meal of the day, and yet it is often the most forgotten meal of the day, especially as a college student. Whether you just rolled out of bed and have just a few minutes to get ready for class, or you are using these last few minutes to finish a last-minute assignment, eating breakfast will start your day off on the right foot, and of course, don't forget the coffee.
These 10 quick and easy breakfast meals are perfect for a busy college student, schedule 5-10 extra minutes in the morning to make these easy breakfast ideas, or even make them the night before and grab them before you walk out the door!
1. Breakfast Sandwich
One of my favorite breakfast meals ever! If I have about 5-10 minutes in the morning this is my go-to breakfast. Toss a bagel or an english muffin in the toaster while you scramble up an egg. When the egg is done put a piece of cheese on top, warm up ham (or you deli meat of choice) in the pan and put it all together in a sandwich! I wrap mine in tinfoil to keep it warm and take it with me to class to eat.
2. Yogurt Parfait
Yogurt parfaits are great because you can add whatever you want. With your favorite yogurt, add fruit, granola, honey, chia seeds, whatever your heart desires and you're ready to go!
3. Overnight Oats
Overnight oats are easy to make and great to take with you to eat on the go. In a mason jar add old fashioned oatmeal, some yogurt, chia seeds, fruit, cover with milk of your choice, and then in the morning shake and you're ready to eat.
4. Apple Cookies
It is like a cookie but healthy! Slice an apple, slather on some peanut butter, then add granola, walnuts, dark chocolate, coconut, whatever you'd like and you're set to go.
5. Energy Balls
Another one of my breakfast favorites, these energy balls are easy to make, last a long time in the fridge, and are the perfect bite-sized snack. Use old-fashioned oatmeal as the base, and add 1/2 cup of peanut butter (or nut butter of your choice) per cup of oatmeal. Now you can have fun and add whatever ingredients you'd like: chocolate chips, dried cranberries, coconut, honey, chia seeds, walnuts, dates, etc.
6. Bread
One of my favorite things to do when I have overripe bananas is to make banana bread, and when zucchini is in season, you can bet I'll be making zucchini bread. But any kind of bread is also a belly-filler for breakfast, grab a slice and you're ready to go!
7. Smoothie
Smoothies are another easy breakfast meal. Grab your magic bullet or blender, toss in the fruit of your choice, some yogurt and blend away! Add a handful of spinach or protein powder to an extra energy packed smoothie.
8. Ham and Cheese Roll Up
Roll up some ham and cheese in a crescent roll to make these savory breakfast bites. Freeze the leftovers and pop them in the microwave on those extra busy mornings.
9. Peanut Butter Wrap
If you have tortillas, peanut butter, and an apple or banana then you have everything you need to make this tasty breakfast. Spread the peanut butter on the tortilla, add the fruit of your choice, along with whatever other toppings you'd like (chocolate chips), roll it up and you're out the door!
10. Pancake Bites
These pancake bites taste great and don't take long to make. Whisk together instant pancake batter, pour into a mini muffin tray, add your toppings (chocolate chips, blueberries, cinnamon) pop in the oven and in about 10 minutes they're ready to eat. Freeze the rest and pop them in the microwave to reheat.
