Last February, I decided to stop eating meat and since then, I have learned so much about myself. I have adapted to a diet that I never thought I would able to stick to. Being a college student made me think that it would be close to impossible, but it has actually been very doable and easy. It has been a year, but I am still learning how to adapt and still be healthy throughout the whole process.
Ever since I was young, I have always been a terribly picky eater. I never really grew out of this, and even came into freshman year of college with very picky eating habits. I met a few friends who were vegetarian/ vegan, one of which was my roommate, and they were just such healthy eaters.
I was really just curious in the beginning and decided to try it for a small period of time to see if I could do it. The best part about this process was that I was forced to try new things all the time. I started eating more fruits and vegetables and trying new things on the vegetarian menu at any restaurant I went to. I realized over time that I just felt better than I did when I ate meat.
I liked eating things that weren’t so heavy on my stomach but were still able to fill me up. I have found it really interesting to challenge myself and I realized how many healthy alternatives are available. Living in a place like Charleston is really awesome because there are so options for vegetarian/vegan meals.
I have learned a lot about myself and have really learned to discipline myself during this process. Even if it is not for a long period of time, I recommend this change to anyone who is willing to switch things up and challenge themselves to a new diet that makes them feel good.
