Disclaimer: I did not give up meat overnight. Throughout the summer, I gradually opted for meatless meals, particularly when dining out. Having researched the numerous benefits of a plant-based diet, it was my goal to completely eliminate meat from my personal menu. The two powerful documentaries What the Healthand Food, Inc.intensified my motivation to be vegetarian.
It wasn't until I came to Syracuse University that I realized how feasible a vegetarian diet can be. Every dining hall has vegan and vegetarian options for every meal, in addition to a vegetable bar and a fruit bar. At home, I would mainly resort to salads when avoiding meat.
I now know that there are way more options than just a salad for lunch and dinner. I've had black bean burritos, tofu parmesan, beet and kale burger patties, hummus pitas, vegetable stir fry, fennel au gratin, spring rolls, and other yummy vegetarian options.
For the first couple weeks of school, I ate a vegetarian diet without even realizing it. The dishes in the vegetarian/vegan section always look delicious, so I naturally go to that station first. I know I can stick with my long-term goal of being meat-free for real this time because I now have more resources than I did back at home. Healthier food tends to be on the pricier side, but that isn't a concern in college because of dining hall meal swipes. Financially and socially, eating a vegetarian diet is much easier in college.
Beyond the dining hall, the Syracuse community is home to restaurants with ample plant-based options. Strong Hearts Cafe is an entirely vegan cafe conveniently located on Marshall Street. Original Grain, located in Armory Square, offers vegan and vegetarian bowls, nori wraps and more. Other popular restaurant's in the area have tasty vegetarian options, Including Calio's garden calzone and Bleu Monkey Cafe's vegetable noodle bowl.
A vegetarian diet may not be right for everyone, but I am confident in my decision to make the switch. It's empowering to know that I am reducing my carbon footprint, as well as making a positive difference in my personal health.
