As I am writing this article, I am also fighting off the flu. You'd think I would be absolutely miserable and perhaps even a but pessimistic. However, being sick today has really reminded me what amazing friends I have! All day I have been bombarded with get well texts and offers to get me anything I need. In addition, I also had a few very sweet friends come check on me in person. I awoke to tentative knocks on my door a few times today and my heart was melted by the sweet words and gestures on behalf of my friends today.

It is no secret to anyone who truly knows me that the transition to college was extremely difficult for me and even coming back for sophomore year was a challenge. My family lives 24 hours away, thus they can't be with me very often. Though I miss them dearly, God has blessed me with friends here in Nebraska that have become apart of my family. The kind of friends that put others above themselves, never fail to make me laugh even in the worst of situations, and show me God's love everyday. Always there to joke about my southern accent randomly coming out in conversation, to offer a hug when I've had a hard day, and to just simply listen to me vent about stuff that won't matter in the long run.

To my wonderful friends, thank you from the bottom of my heart for putting up with me and always looking out for me. I truly know that y'all would do just about anything for me, and I hope you know that I would do the same. True friends take care of one another and I am beyond grateful for those that God has placed in my life within the past year and a half! I love y'all and can't wait to make more memories once I am no longer bound to my dorm room.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
