Where there is year-round beautiful weather, there is also incredible food to match it. At least, that is what can be said about San Diego. However, sometimes as college students we tend to have busy schedules and an overwhelming work life that can deter us from enjoying the simple things in life, i.e. dining out at new restaurants with friends. It can be easy to fall into a meal routine and shy away from unique-sounding restaurants because no one wants to risk an unsatisfying meal when you're already really hungry. Not only this, but dismissing the nutritional value of food is also a cause of concern when it comes to finally having the time to "treat yourself".

Luckily, with the increase in popularity of plant-based diets and vegan lifestyles in the media, more and more restaurants are choosing to incorporate more diet-friendly meals into their menus. Restaurant chains from various regions are slowly but surely finding their way to the sunny southern region of San Diego where those of us who are health-conscious dominate.

If you have not already, check out the five following restaurants that are thriving in San Diego because delicious food needs to be noticed.

If you are a lover of Thai food, then Plumeria Vegetarian Restaurant is the place to go. This restaurant, of course, as the name implies, appeals to those who choose to exclude meat from their diet, but also to all who enjoy Asian flavors. Try their soy duck and mock chicken for a juicy texture, or their classic spring rolls for a light meal. They have a variety of fan-favorite Thai dishes as well such as Pad Thai, Crispy Tofu, Curry, Spicy Noodles, and House Fried Rice. They also claim that as a way to help the environment, they will let you bring in your own takeout boxes and let you save $1 on takeout orders!

To add to the list of yummy San Diego restaurants serving Asian dishes, The Purple Mint Vegetarian Bistro is another option to consider if you are looking for sweet or savory dishes that are not your typical salad entrees. As soon as you walk in, you will find yourself immersed in a beautiful laid-back atmosphere filled with zen-like decor. Bring friends or family here if you want to spend some time eating foods like Yam & Sweet Potato Curry or Lemon Grass "Chicken" while overlooking a koi fish pond!

Native Foods Cafe is another popular choice that is more for those wanting a plant-based quick bite while not having to sacrifice flavor. In addition to their wide range of satisfying options such as the Chickpea Tikka Masala or their Spicy Fried Cauliflower, they are also an earth-friendly cafe! They are dedicated to serving animal-rights and environmental organizations, and according to their website, everything they use is eco-friendly. This restaurant is worth a shot if you are craving something hearty yet wholesome.

If you are more into raw foods that are also gluten-free, soy-free, and vegan, then Peace Pies, a quaint little restaurant, is the one for you. They have everything from Peaceful Pizzas to Sinless Cinnamon Rolls. You can indulge in so many of their meals without worrying as much as you would at your typical fast-food restaurants.

Lastly, head on over to Cafe Gratitude if you feel you want something that not only reminds you of humility but also of nourishing meals with all of the great benefits that come with eating foods highly nutritious. San Diego has so much to offer, so find what works best for you!

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
