Later this week, Monmouth Park is officially open for business for the summer season. Live racing returns to the shore this Saturday, May 14, with the gates opening at 11:30 a.m. The first race will go off at 12:50 p.m., and the summer at Monmouth will unofficially be underway.

Even if you know nothing about horse racing, a day at Monmouth Park can be a fun one. Grab a few friends and head out for a day of nice weather. You can bring some food, drinks and sit outside, or if you want a little shade and a breeze, head up to the grandstand and enjoy the view.

If you do not like to gamble, that is perfectly fine. Every race, just pick a number and go head-to-head with your friends and family even if you aren't betting money, that way your group can still take in the races and have some fun pulling for a horse. If you want that extra incentive but do not want to spend your entire bank account, get a $40-or-so voucher and have a little fun.

One of the best traditions at Monmouth is the Jersey Shore Food Truck Festival. Two weeks after opening day, the food trucks are back! For three days they will be occupying the area just behind the grandstand for all to enjoy. On Saturday, May 28, and Sunday, May 29, the gates open 30 minutes early, and you will be able to enjoy some snacks starting at 11 a.m. The final day for the trucks will be Monday, May 30, when the gates will open at the regular 11:30 a.m.

There will be 50 trucks participating at the festival this year. There is a truck for just about anything you want to have. Cheesesteaks? Check. Ice cream? Check. Grilled cheese? Check. Empanadas? Check. You name it, there is a pretty good chance you will find it.

Straight from Monmouth Park's website, here are the 50 food trucks you can keep an eye out for:

1 Potato Two, Ahh! La Cart, Amanda's Bananas, Ann's Catering, Cheezen, Chilangos, Chimney Cake Factory, ChipStix, Cold Stone Creamery, Cupcake Carnivale, Dark Side of the Moo, Dellano Food Service, El Lechon de Negron, Empanada Guy, Enzo's Deli, Falafull, Fed By Ed, Five Sisters Catering, Fork in the Road, Four Boys, House of Cupcakes, Igloo Ice Cream Truck, Jersey Johnny's Grill, JerZey EatZ, Kenny's Empanadas, Kona Ice, Little Pompier, Luigi's Ice Cream, Ma and Pa's Tex Mex BBQ, Mac Truck NYC, Maddalena's Catering, Mary Queen of Pork, Max's Famous Hot Dogs On Wheels, Mobile Mardi Gras, My Four Suns, My Hola Paella, Naked Tamales, Oink and Moo BBQ, Philly Fry, Pizza Vita, Pompier Pierogi Flats, Red Hook Lobster, Star of The Sea Seafood, Surf and Turf Truck, The Angry Crab Food Truck, The Cow and The Curd, The Outslider, The Tasty Trolley, Tony's Italian Sausage, Waffle de Lys

I may not be able to speak for all of these, but I can make a few recommendations based on past experiences.

Max's Famous Hot Dogs on Wheels

While I have never been to the "on Wheels" version, I have eaten at Max's on Ocean Ave. I am typically not a big fan of hot dogs, but I can say Max's has a really good one. If you want to have a darn good dog, Max's is your truck. If you enjoy it, you can just head down to Ocean Ave. for another one whenever you want.

Kenny's Empanada's

I'll be honest, I did not actually eat here last time because the line was too long. But I love the name and did take a picture with the sign last year!

ChipStix

You will see everyone walking around with these things. At first you will ask, "What the heck are those? They look like fried chips on a stick." Well, that's precisely what they are. When I first saw them, I didn't think they looked that appealing. But after seeing person after person walk past with them, I started to get intrigued. This may very well be the year I finally try them.

The Angry Crab Food Truck

Crab or lobster sandwiches, anyone? We are by the shore, so if you want a little seafood twist to your day, this could be your truck. I sure hope they are selling some of their lemonade too, as it is infused with mint and basil. I have no idea if it will be any good, but it sure has me intrigued, especially since I am a fan of mint.

The Outslider

Who doesn't like sliders, seriously? A truck that has all different kinds of sliders sounds amazing. Chicken, beef, pork—they have it all. There's a good bet you can find me on this line at some point during the weekend.

Now these are just five of the 50 options you will have. So be sure to take a peek at as many as you want. There will be an option for everyone.

Come for the racing! Come for the food! Come for the fun! The food trucks will be rolling into Monmouth Park Saturday, May 28, and staying until Monday, May 30. Don't miss out!

For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). I grew up with John, Paul, George, and Ringo instead Justin, JC, Joey, Chris and Lance (I had to google N*SYNC to remember their names). The highlight of my short life was Paul McCartney in concert twice. I’m not someone to “fangirl” but those days I fangirled hard. The music of The Beatles has gotten me through everything. Their songs have brought me more joy, peace, and comfort. I can listen to them in any situation and find what I need. Here are the best lyrics from The Beatles for every and any occasion.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.
