Dear Mom,

Happy Birthday Mom. You have aged like fine wine and don't look a day over 20. You have no idea how much I truly love you. There are so many things I could say about you but my words simply don't do you any justice. I have never met anyone who loved and protected her children more fiercely than you do. And talk about a multi-tasker! You do laundry, work full time, clean, cook, and chauffeur all at once. I swear I drop one crumb and 3 seconds later your right behind me picking it up.

This is my favorite picture of you. It is so imperfectly perfect. I once saw a quote that said, "Every once in a while, the stars align.. the mood is right, the lighting is flawless, and the expressions on our faces speak a thousand words without uttering a single syllable. I'm not saying its the perfect photo. But I'll be damned if it ain't as close as anyone has ever come." That is why it is my favorite photo of you and dad. A professional didn't take it, you weren't dressed for the grammy's, but your smile and the simplicity of the photo makes it.

Theres nobody else in this world that I laugh more with. You make all my bad days into good ones and no matter how bad I feel, I know you are feeling everything right there along with me.

You also gave me one of the greatest gifts in life and that is my sister. We fight and we argue but at the end of the day you gave me someone that will have my back for the rest of my life. You gave me a forever friend and what more can we ask for?

I have never known another person that carries themselves with such beauty and grace. You are incredibly strong and independent and I don't know how I got so lucky to have such an incredible role model like you. Something about you that has definitely not faded with age is your fierce competitiveness and obsessive cleanliness. We always joke, but it is true, deep down inside, you are Monica.

Mom, you will always be my best friend, my confidant and one of the most important people in my life. I am so extremely proud of everything you have accomplished. I couldn't imagine my life without you.

Happy Birthday Mom.

I love you.

-P

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.

Challah vs. Easter Bread: A Delicious Dilemma

Is there really such a difference in Challah bread or Easter Bread?

Ever since I could remember, it was a treat to receive Easter Bread made by my grandmother. We would only have it once a year and the wait was excruciating. Now that my grandmother has gotten older, she has stopped baking a lot of her recipes that require a lot of hand usage--her traditional Italian baking means no machines. So for the past few years, I have missed enjoying my Easter Bread.
