Easy One Pan Shrimp Fajitas

This recipe is not ground-breaking, and it involves little to no prep work. It's easy to make and it's perfect for a quick family weeknight dinner. You can always make your own fajita seasoning or modify this recipe with other toppings and garnishes, but sometimes you just don't have time for that. When I cook, I typically use the motto, "The faster I get to eat, the better." With that being said, this is how I make shrimp fajitas the super fast and easy way.

Ingredients:

1 lb small shrimp, peeled and deveined, tails off
1 red bell pepper, sliced thin
1 orange bell pepper, sliced thin
1 yellow bell pepper, sliced thin
1 small red onion, sliced thin
1 small box of mushrooms
1 packet of fajita/taco seasoning
1 tablespoon olive oil
flour tortillas, warmed

Instructions:

1. Preheat oven to 450 degrees.
2. In a large bowl, mix together all ingredients (except the tortillas, of course) until evenly coated.
3. Spray your baking sheet with non-stick cooking spray, then spread the contents of the bowl evenly onto the pan.
4. Cook in the oven for about 8 minutes, then turn oven to broil and cook for an additional 2 minutes until the shrimp is cooked through.
5. Serve ingredients on warm tortillas.


And that's all there is to it! Enjoy these fajitas with a side of Spanish rice and black beans for a delicious Tex Mex meal that your family is sure to love!

I was asked so many times why I wanted to go to a small school when a big university is so much better. Don't get me wrong, I'm sure a big university is great but I absolutely love going to a small school. I know that I miss out on big sporting events and having people actually know where it is. I can't even count how many times I've been asked where it is and I know they won't know so I just say "somewhere in the middle of Wisconsin."
